In this thesis,taking Acer ginnala as the experiment material,the technical conditions of extraction and chemistry character of red pigments were studied,respectively,the possible molecular structure of the pigment was discussed.According the experimentation result,we will adopt chemistry method to protect red leaf stability.The extraction solvent was 50%ethanol and hydrochloric acid solvent.The processed were optimized using temperature,time,power,ratio of material/solvent as factors with extraction solvents.The influencing effects of each factor was D>A>C>B,the optimum technical conditions of ultrasonic extraction was A3 B3 C3 D1,i.e.extraction temperature 70℃,power 250w,material/extractor ratio 1:30,extraction time 80min.The biggest absorbance wavelength of Acer ginnala red pigment was 528nm.When the pH value = 6,the solvent was red and it can be checked the absorbency.When the pH value =7, the solvent was kelly with deposition and cann't mensurate the absorbency neither.Nature irradiation can destroy pigment seriously,and the appropriate violet irradiation can improve red piment's colour.When the temperature was lower than 70℃,the red pigments were preserved well,the temperature was higher,the red pigments were decomposed.The sucrose and the organic acid can enhance the color of the solvent.The oxidant and the reducer destroyed the pigment seriously.After joining the metal irons K+,Na+,Ca2+,Zn2+,Mg2+,Pb2+,Mn2+,the absorbency variety wasn't distinct.After joining the metal irons Al3+,Cu3+,Fe3+,Fe2+,it affected the stabilization prominently.The appropriate concentration Al3+ had the effect of adding the solvent's colour.Cu2+,Fe3+,Fe2+ can make pigment solvent having deposition with turbid pHenomenon.It was not suitable to join in the solvent.The TLC and LC\MS analyses wre used to isolate anthocyanins and to determinate the molecular structure.The result show that the sample may be delpHinium and pentose getting rid of H2O.The possible molecular structures of the pigments was delpHinium-3- pentose.The best colour protecting solvent:10%sucrose + 6%tartaric acid + Zn2+,this protecting solvent can immerse red leaf,and also can be heated to protect red leaf.The protecting effects were both well to achieve the purpose of red leaf protected.
