Traditional handicraft belongs to highly technical and artistic category which contains the wisdom and creativity of the Chinese people. Most of traditional handicrafts are still widely used in social production and daily life, its practical value can not be ignored. With the improvement of material life and spiritual life, people start to pay attention to traditional handicrafts’ cultural value except practical value.Technology of liquor is one of traditional handicrafts which has practical value and cultural value.We can study it from three aspects, those are historical analysis, technology and the theory of technology evolution.George Basalla is the professor of history of science and technology of the university of Delaware in the United States. His main point of the technology is that the technology is evolutionary and the development of technology evolution both autonomy and selective, continuous, and discontinuous, in this process there are also exist technical innovation.The influence factors of technology evolution mainly includes social factors, economic factors, cultural factors and so on. With regard to Xuan small cellar technology, its inheritance and development is results from the interaction of various factors.Xuan Liquor’s brewing skill is an unique skill compared with other brewing skill in Anhui province. It’s ancient small cellar brewing skill was selected as intangible cultural heritage protection list of Anhui Province in 2008. We can study the ancient small cellar brewing skill from historical analysis, technology and the theory of technology evolution.This article describes the development of Xuan Liquor from three aspects of history,technology and the theory of technology evolution. Specifically: first, from the historical origin of Xuan Liquor to explore its cultural heritage. The paper analyses the advantages of the development of Liquor industry in Xuanzhou area,and then analyses the evolution of its history, with emphasis on describing the history and evolution of “the old Chun liquor” brewing technology development in different periods to infer the history and brewing technology of early Xuan Liquor. Second, the paper analyses the brewing technology of Xuan Liquor. From the brewing technology of Xuan Liquor in Yellow Liquor stage and distilled liquor stage, to explore the process of its evolution and find the technology of Xuan Liquor. The paper also analyses the technology of Xuan Liquor’s different flavor,such as aroma flavor, new aroma and sesame flavor, summed up the characteristics of Xuan Liquor brewing technology. Third, the paper describes the theory of technology evolution of Basalla and analyses the reason why Xuan Liquor’s small cellar technology can be retained in today from the thought of continuity, the thought of technical innovation and the thought of technology selection.
