In the process of large-scale wine brewing, the traditional procedure of cellar picking is completed by artificial. But with the narrow and small work place, high labor intensity, poor work conditions and sanitary conditions, and low production efficiency, the traditional procedure no longer can adapt to the new production requirements. The transformation of mechanization is badly needed. To increase the standards of production mechanization will certainly become a key research subject of brewery industry.In this paper, according to the technological requirements of cellar picking, the general structure design of the cellar picking device is completed. This device is composed of translation mechanism, revolving gear, quick-changing mechanism and cellar picking working device. The translation mechanism, which consists of bridge crane and elevator machine, implements the cellar picking device’s translation in the X, Y, Z direction, and transshipment fermented grains. The revolving gear implements cellar-up device’s rotation motion, improves the operation flexibility. The translation mechanism and revolving gear ensure that the cellar picking device can work in any places. Quick-changing mechanism can quickly and accurately replace other devices and improve the versatility of translation mechanism. The cellar picking device, as the end effector, consists of fermented grains picking device and cellar cleaning device. The fermented grains picking device which is used for picking up fermented grains can finish its job with assistance of other mechanism. The cellar cleaning device consists of cellar wall cleaning device and scooping up yellow water device, which respectively finishes cellar wall cleaning and scooping up yellow water.The writer manages to complete the overall plan design of the controlling system to realize cellar picking process automation, through studying the overall structure of the controlling system, controlling process and the functions and controlling ways of all modules constituting the system. The controlling system consists of Human Machine Interface (HMI), PLC, servo diver, servo motor and senor. In order to form closed-loop controlling system and achieve high precision control, HMI as upper computer monitors running information, while PLC as lower computer controls the servo driver to drive the servo motor which drives mechanical transmission units, and the encoder and sensor feedback the running information to servo drive units and PLC controller to make operation process.The device not only meets the process requirements, but also realizes cellar picking process mechanization and automation, improve production efficiency, lower labor intensity and advance sanitary conditions during the production.
