Daur, a typical nomadic ethic minority, mainly inhabit Inner Mongoliamunicipality and Heilongjiang Province. The Daur people were called “Pioneers”in the Qing Dynasty and “Cultivators” when settling on the bank of the NenRiver in the Tang Dynasty. Owing to the nomadic life and lifestyle changesthrough history, they are proud of their splendid culture. The Daur culture, theessences of which are “harmony with man and nature” and “respect for the aged”,is the essential part of Chinese national culture. However, with the constructionof cities, fertile grasslands are being replaced by concrete skyscrapers. The Daurpeople are losing their homes at the same time. As a consequence, the Daurculture is now being seriously affected and weakened. Therefore, it is urgent toprotect the Daur culture heritage for the sake of cultural inheritance from thelong run.The thesis is based on the theory of the modern environment design oftheme restaurants and lays emphasis on the Daur culture applied to theenvironment design of theme restaurants. The Daur cultural characteristics willbe found out through the analysis of its historical context, religious traditions,architectural features, folk custom and so on. With the help of the above analysis,conclusions can be drawn that a certain environment design is consistent with theDaur dining culture. In other words, the Daur ethnic culture is considered as animportant element in the design of theme restaurants.This thesis is divided into four parts, and the content is organized throughasking, analyzing and solving problems in a logic order. To start with, the thesisintroduces its research background, relative researches from home and abroadand the necessity of protecting the Daur culture. Then, it analyzes the characteristics and the development trend of theme restaurants. After that, thethesis discusses about the possibility of applying the Daur culture to the design oftheme restaurants with the help of the local market research. Finally, ways ofapplication and its future prospects will be given.
