The Massicus raddei(Blessig) belongs to Coleoptera,Cerambycidae families,and it is a kind of decayed stem pests that major damage Mongolia oak (Quercus mongolicaFisch).As a sort of animals insects,it contains abundant protein,Amino acids,multiplex vitamin and essential trace elements,so it has high eating quality.This paper mainly study on nutrient content and edible safety of Massicus raddei(Blessig), and on that basis proceed its processing technique tentatively to lay the foundation for developing of natural health insects food.The main conclusions of this paper are as follows:1.Nutrition composition analysis of Massicus raddei(Blessig):Nutrition of Massicus raddei(Blessig) was analyzed by atomic absorb spectrometer for microelements such as K、Ca、Mg、Fe、Zn、Cu、Mn etc.,and determine protein and fat through the kieldahl method and soxhlet.Amino acid components were determined by automatic amino acid analyzer.This study extracted chitin by means of water extracting method,and respectively determined the ash and moisture by oven drying method and ignition method in addition.The results showed the contents of protein, fat,amino acids,ash extracted from fresh sample Massicus raddei(Blessig) was46%,16%,44%,10%respectively.Furthermore,the beetle contained ample human essential element.The chitin extracted was23.20g/kg,moreover its purity was more than70%.From the above,the results of research showed that the Massicus raddei(Blessig) contained abundant protein and fat,and it also has multiple microelements, thereinto, the heavy metal elements were in the safe range.Therefore, the Massicus raddei(Blessig)had ambitious nutrition value and utilization prospect.2.The edible safety of Massicus raddei(Blessig),The impact of body weight in mice consumed beetle:The KM mice were fed five kinds of food,which added beetle0%、12.5%、25%、50%and100%in proper order in28days,then it was proved that the beetle did not have toxic effects to mice.The impact of physiological Indices in mice consumed beetle:It was testified that the beetle did not exist biological toxicity and sensitization to mice consumed beetle when it was ate in normal level.The influence of serum biochemical index in mice consumed beetle:It indicated that the serum biochemical index such as total cholesterol, triglycerides, albumin, urea nitrogen, blood sugar,alanine aminotransferase,aspartate aminotransferase, alkaline phosphatase were in normal range. The affect to mice sperm motility in mice consumed beetle:The mice sperm motility did not change significant.Mouse bone marrow micronucleus test.The beetle perfusion can not influence micronucleus rate of mice.The60d feeding test:The beetle did not exist genetic toxicity and chronic toxicity.To sump up,the Massicus raddei(Blessig) was safety for eating and feeding.3.Massicus raddei(Blessig) processing:The way of cooking beetle reference the traditional processing method of other edible insects.The beetle has proper flavor as the other edible insects after cooking.The high eating quality breast part was1/3weight of total body.The breast part tasted crisp delicious, having a little elasticity and ductility,was a superior quality edible part.It has been determined that the beetle produce is suitable for eating.
