Aiming at the controlling to production of beer with generalmeters in many beer factories of our country, there're manydisadvantages in such production process. It can't ensure theveracity of beer's producing craft, results into fluctuation ofbeer's quality, difficult to enlarge reproduction scale, and so on.Accordingly, we bring forward technique of computer monitoringand controlling, it adopts IPC - PLC distributed control system,associates with concentrated control and data management, meetsthe demand of modern production, furthermore, improvesenterprise's technical level, management and competitioncapacity in market.The thesis mainly improves unidentification and self -adaptive controlling arithmetic brought forward by Marsik andStrejc, according to characteristics of inertia and time lag inbeer's fermentation process. It doesn't add demands to processmodel and also makes the unidentification and self - adaptivecontrolling arithmetic adapt process controlling of complexindustry with characteristics of time lag and difficulty tomodeling.
