The beef cattle industry is the emerging industry which develop rapidly after our country'reform and open policy, also was one of quickest raising develops livestock industries in recentyears. After China joins to WTO, with beef market becoms more opening and the beef import tariff gradually reduces, beef production and trade are facing a bigger opportunity and challenge. Our country is a great nation in beef produces, the production of beef is always the third in the world,but our country also is a small country in beef consumption and trade. The average consumtion of everyone is less than 1/6 of the developed country,the trade is less than 1/100 of the world.With the enhance of people'live level and more value of nutrition balance, the beef consumption quantity will certainly grow gradually, the beef market is containing the huge potential.This article profits from the domestic and foreign correlations research results, using real diagnosis, the standard, qualitative, system and comparative methord, through contrast analysis beteen domestic and foreign beef productionand trade,then discovered that: from 1996 to 2005, beef production developed rapidly, the production layout or region already transformed from the traditional western pastoral area to the agricultural area; Centralism degree is higher;The cities inhabitant, the high income social stratum,the northern area and the winter are higher consumption quantity in beef; The beef trade accounts for the world proportion to be very small, the import and export most is frozen boning beef, and the exportation quantity existence drop tendency, the import quantity Existence trend of escalation; Beef mainly exports to North Korean, Hong Kong and the partial middle east country and the areas, but mainly imports from US, Australia and New Zealand; Beef cattle'production level is low, beef quality is unsatisfactory, beef industry level is low, the hygienic standard has not connected with international standard, the beef product variety solely, marketing sales way is backwardness, brand consciousness is light and so on.All of this are the important factors which restrict beef production and trade in China. In this foundation, this article proposed policies and suggestions which contribute to beef production and trade in China.
