Research On Yuan Dynasty’s Beverage

The Yuan Dynasty is a unified period that Mongolian conquered the Central Plain and gained dominion, contacts and exchanges among various nationalities strengthened. On the other hand, because the land and sea transportation was convenient between China and foreign countries, external relations had also been an unprecedented development. Under the historical background, the beverages of Yuan Dynasty were also affected by the economic and cultural exchange of Chinese and western, the internal and economic, had various types.First, this thesis reviews the diet literatures of Yuan Dynasty, from the agricultural book, culinary literature, the notes and travel notes, encyclopedia and others, simply explored and narrated their authors, written time, the origin and development of editions, and content.Second, from the milk, the alcohol, the tea, and the other, to explore the beverages of Yuan Dynasty, recounting their ingredients, origin, production method, how to eat and related content.Third, analyzing the diet concept by the beverages of Yuan Dynasty, namely the concept of dietetic hygiene, the concept of dietetic regimen, the concept of dietetic contraindication.At last, summarized the characteristics of Yuan Dynasty’s beverages. A wide variety of beverages in Yuan Dynasty is the result of national diet custom’s fusion and Chinese and foreigners’food culture’s communication.
