Se-enriched matcha is rich in organic selenium, providing new thought forselenium supplement. This paper aims at develop se-enriched matcha food, includingse-enriched matcha nutrients, detoxification and excreting lead efficacy, selenium-richmatcha cake processing and color protection, rich selenium matcha drinksdevelopment four aspects, the main results were as follows.Comparing between selenium-rich matcha and common matcha nutrients foundthat the forward contains higher Se,Na, Fe,zinc and Cu,but lower Mn. Amino acid,catechins, ash content, water soluble ash content in shade-grown se-enriched matchawere higher than non-shade matcha powder. Water extract, caffeine, soluble protein,total sugar, water insoluble ash content is below shade tea powder. With the increaseof shade-grown time, ash, amino acid, fat, caffeine content of matcha graduallyreduce, tea polyphenol content gradually increases; Moderate shade is conducive tothe accumulation of amino acids, but the excessive shade to cause a decline in aminoacids, shade net method is used to cover the best tea tree shade length may be19or20days. Compared with the enshi high curative value, the total free amino acid inse-enriched tea and tea polyphenols content is low, caffeine, a high content ofselenium. Wipe selenium-rich steamed green tea extract, tea polyphenol, total sugarcontent is higher than traditional tea powder;Amino acids, caffeine, soluble proteincontent is lower than the traditional tea powder. Steamed green tea in Se, Na, K,Mg,P content was higher than in traditional tea powder; Ca,Fe, zinc, Cu, Mn content islower than that of traditional tea powder. Selenium-rich tea classics besides irongrinding, grinding, ball mill, four kinds of different processing methods afterprocessed into tea powder, present different form, D50size order: iron mill> steelmill> stone mill〉ball mill.Research selenium-rich tea efifcacy, we found that besides selenium-rich meshshading matcha, selenium-rich tent shading matcha, selenium-rich not shading tea powder, ordinary tea, instant tea all have good bowel movement function. Among them, not shading tea powder was better than that of shade matcha, tent shade matcha detoxification effect is better than that of net shade matcha, ordinary matcha is better thant the rich selenium tea. We found that blood lead expelling effect of selenium-rich tea is:Y4> EGCG> MT04=EDTA> MT01> TP>CK> inorganic selenium>organic selenium>P1> W4> instant tea> control model. Brain lead expelling effect is:EDTA=MT04> CK> inorganic selenium>tea polyphenols> instant tea> MT01> P1> yeast selenium> Y4> control model> EGCG.It has been found that the green degree of matcha cake after baking was reduced by the research of selenium-rich matcha cake processing technology and study. The color of the cake baking with shaded tea powder exhibit greener than the cake baking without shaded tea powder. Studies have shown that food addiitive A can strengthen the slant green degree of Matcha, and reduce the slant yellow degree. So, the addition of food addiitive A can increase the green degree of matcha cake, but not the more the better. PH adjusting agent, for example, the food addiitive B and food addiitive C, can influnce the green effect of Matcha cake, and the effect of white food addiitive C was better than food additive B. The effect of protein buffer (food addiitive D) on Matcha cake color was not significant, but it can enhance the degree of brightness and partial green degree of the Matcha cake to a certain extent. Protein buffer and lactic acid powder can be used to improve the brightness and enhence the green degree. Matcha cake storage with refrigerator indicated higher brightness, greener colour and lustre.The study found that the optimum temperature to drink selenium-enriched Matcha is70℃. It is appropriate to brew one gram Matcha with200mL0℃water, or brew one gram Matcha with300mL70℃warm water. Electronic nose can distinguish different shading time between the Matcha shaded with tent and shaded with network; radar chart shows that the sulphide content of aroma components are difference for Matcha shaded with tent. According to the difference of the four sensor probe TA/2, T40/1, P40/1, P10/2on the electronic nose, we can iscernible whether the Matcha was shaded or not. The best formula of selenium-rich matcha milk tea wasmatcha0.45%, whole milk powder7%, creamer1%, sugar1%.
