Sensing technology is the rapidly growing high technology, and also an important sign of the level of modern engineering and technology development. Fiber optic sensors have been incorporated into one of the modern sensor technology development direction and put in a lot of research work in the theory and application. Its high sensitivity and large dynamic range has demonstrated a huge developing potential. This paper discusses the basic principle of interferometric fiber-optic accelerometer in detail and the corresponding phase generated carrier(PGC) detection technology, and bring forward using of virtual instruments to achieve PGC demodulation program. Through the application of procedures virtual instrument combines the computer and functions of hardware modules. Users can manipulate the computer through graphical interface, like traditional instruments. Its advantages of simple, easy debugging will be more widely used. The PGC homodyne demodulation technology is used frequently to demodulate signals from interferometric optical fiber sensor. However, it is difficult for the system to achieve the optimum performance because the electronic components which constitute the analog circuit have some problems such as improper resistance, overload, and temperature drift etc. An optical fiber accelerometer system based on virtual instrument technology was described. Compared with the traditional hardware design, the method can overcome the noise from analog circuit and mismatch between components. In the virtual instrument environment to achieve the signal acquisition and display, data processing and phase modulation, the design has more practical feasibility. On the basis of completed PGC demodulation, the issue developed a data acquisition system so as to achieve the integrity of the entire system design.
