With the raising of our living condition, we start to evaluate food from the perspective of health, nutrition and reasonable combination, and keeping food safety has become the foundation of protecting human life, enhancing human living condition, boosting food business as well as maintaining world peace and development. Thesis makes a research on food safety supervising management system establishment of the catering business in Shenzhen.First of all, thesis analyzed the safety situation in Shenzhen catering business and discovered the principle problems in the supervising and management through the questionnaires on Food Business Supervising and Management implementation, then finally put forward the proposal to establish supervising management system.As for the design of food safety authentication and inspection measurement, firstly thesis summarized the range of food safety authentication and inspection on three perspectives including request to business place, food sanitary facilities and public sanitary facilities; Secondly, it conducted priority layout by using analytic hierarchy process (AHP); Finally we prepared quantitative table format, and made the operation procedure as well.Speak of food safety quantitative classification management proposal, thesis offered the whole strategy of quantitative classification management for Shenzhen catering business, which includes formulating quantitative classification supervision table, evolving classifying standard on catering business, carrying out dynamic monitoring on restaurants, then analyzied the possible carryover effect. The analysis proves that the implementation of quantitative classification management effectively enhanced the overall level of food safety in catering business.Then comes the establishment of food safety training system. This thesis led the HACCP theory into training management system by use it to compile the content of training. Besides, thesis researched into the questions on enacting training schedule, training implementation & control and training effect evaluation. The significance of this thesis is to explore a food safety supervising management system suitable for catering business developing conditions in Shenzhen, which may satisfy people's requirement on food safety based on the exsisting human, material and finance power by enhancing the supervising efficiency on food safety.
