In this study, some characters are determined to contrast with zizyphus jujuba dat from Xinzheng of Henan including internal fruit quality( moisture,revertose,total sugar,total organic acid,the proportion sugar to acid,vitamin C(VC),carotene,grease,dietary fiber,protein,amino acid,ash,mineral elements content),physical quality such as the proportion esculent part to stone,the proportion flesh to seedcase,food percentage,flesh tissue state and flavones of zizyphus jujuba dat that came from Ruoqiang and Hami, in order to offer theoretical foundation for produce and relevant research. The result is as follows:1.With determining nutritional ingredients, red date from Xinzheng of Henan is the highest in the contents of moisture,revertose,total acid,fat,total dietary fiber (TDF),insoluble dietary fiber (IDF),protein,amino acids and microelements, while red date of Ruoqiang is the lowest. The contents of total sugar and VC are the highest in red date of Ruoqiang, but there are the lowest in red date from Xinzheng of Henan. In ash content, red date of Hami is the highest, Ruoqiang is the lowest. The content of macroelements is the highest in red date of Hami, while it is the lowest in red date of Xinzheng.2.Through t-test analysis, the contents of moisture,revertose and protein between red date of Ruoqiang and Hami are significant differences; Other contents between two kind of red date are not significant differences. There are extremely significant differences in moisture,fat,DF,IDF,SDF and protein contents, there are significant differences in revertose,total sugar and total acid contents between red date from Ruoqiang and Xinzheng of Henan, but there are not significant differences in amino acid,ash and mineral elements contents. There are extremely significant differences in moisture,total acid,fat,TDF,IDF,SDF and protein contents, there are significant differences in total sugar contents between red date from Hami and Xinzheng of Henan, but there are not significant differences in revertose,amino acid,ash and mineral elements contents.3. Red date of Hami is the highest among three kinds of red date, which is 90.9%. Food percentage is 89.9% in Red date of Ruoqiang and is 86.9% in red date of Xinzheng. The proportion seedcase to esculent part is 9.09% in red date of ruoqiang, is 10% in red date of Hami and it is 25% in red date of Xinzheng so the proportion seedcase to esculent part is less in two kinds of red date of Xinjiang, relatively, it is higher in red date of Xinzheng. Through t-test analysis, there are not significant differences in the external fruit quality between two kinds of red date of Xinjiang. There are not significant differences in the proportion esculent part to stone and food percentage between red date of Ruoqiang and Xinzheng, but there is significant difference in the proportion flesh to seedcase. There are significant differences in the external fruit quality between red date of Hami and Xinzheng. Adopts to scanning electron microscope to analysis the flesh tissue state of three kinds of red date for the very first in the domestic.The result shows that there are obvious differences between red date of Ruoqiang, Hami and Xinzheng.4. The extraction procession of flavones was studied by orthogonal design. The optimum extraction condition is that adding 35 fold of 50% ethanol, and decocting 100min. The content of flavones which is the highest is 454.20mg/100g in red date of Ruoqiang, which is the lowest is 396.24mg/100g in red date of Hami. Through t-test analysis, there are significant differences in the content of flavones between red date of Ruoqiang and red date of Hami and Xinzheng, but there are not significant differences between red date of Hami and of Xinzheng. The result shows that species and habit effect on flavones content in zizyphus jujuba date.To sum up, species and habit effect on not only internal,physical quality but also the content of flavones in zizyphus jujuba date.
