Plasma lipids refers to all lipids in plasma, it is so called hyperlipemia in the case of the total lipids or part of them go beyond the limit level, and the formal definition is the plasma lipid in abnormity or disorder, i. e. the plasma lipid levels exceed the normal limits. It consists of the serum TC level, TG level and LDL-C level go up, and HDL-C level reduce. The suggested standard by Chinese serum lipids disorder prevention and treatment is: TC < 5.20 mmol/L , TG < 1.70mmol/L, LDL-C < 3.12mmol/L , HDL-C > 1.04 mmol/L.Hyperlipemia has become a common health problem in the 21st century. A large number of clinical epidemiology investigate data indicate that the TC level are difference with the places they live, and the incidence of disease and death rate of coronary heart disease is notable different. With people s living standard increasing, urbanization and industrialization, people s eating habits have changed, these causes a large number of the people fatness and physical exercise reduce, and so people s TC level is becoming higher.Whereas the high incidence of hyperlipemia and its serious harm. We have studied the effects of food habits on serum lipid level, as well as the relationship between apolipoprotien E gene polymorphism to serum lipid level was investigated in this paper. The results of the study are listed as follows:1. 1526 cases was analyzed by serum lipid ,and we found that the incidence of hiperlipimia is 31.58%,with only TG high is 17.36%,with only high TC is 7.92%,with both high TG,TC are 6.29%,The others are normal, that is 69%.2. This study confirms that hiperlipimia is connected closely with fatty liver. In Hiperlipimia group the incidence of fatty liver is 19.57%, only high TG group it is 21.51%, only high TC group it is 8.26%, both high TG,TC group it is 27.79%.The normal group is 6.24%.3. We also find that the lipid levels goes up with ages and weight, but those over 75 years old and those 80 kilograms, it goes down. There is no significant difference between sexes and nations while significant difference arises in regions, professions and incomes.
