There are many fakes in the traditional ferment technology of Shenqu , especially the severe quality problem like Aflatoxin. In this research according to the common problems in fermenting technology of Shenqu at present, which combined the fermenting method in traditional processing with modern bio-technology to study the modern fermenting technology. It took TLC and the activity of Amylase and Protease as standard to make sure the proper material. 2 species of bacteria and 2 species of mildew were isolated from the Shenqu. To change the traditional ferment technology into the modern pure specie ferment technology is feasible.
