There are three major issues to resolve for chinese agriculture in the 21st century , the high and stable yield of rice is the key, the quality is the foundation, in the future research and production we should coordinate the yield , the quanlity, the environment. It is a complex physiological and biochemical processes for rice quality, and mainly by itself variety hereditary characteristics and ecological environment and cultivation measures. A massive studies indicated that the rice yield and quality is affected by the rice variety, fertilizer type, the quantity of fertilizer and the composition of fertilizer. This study on grain yield and quality was through types of fertilizer , nitrogen quantity, NPK allocated proportion experiment, the main results are as follows:1.Compared with control, application of organic fertilizer, chemical fertilizers and biological fertilizer can improve the supply of available soil nutrient levels, leading to significant yield, increased by 40.19% - 65.59%, and regular fertilization made the best palatability.2.Along with the raising of N applied ,the panicles, grains per panicles is raising, the 1000- grain weight is decreased. So we shoud chose good varieties or strains fist.3.The results showed that the grain yield was increased with nitrogen fertilizer, in the range of N 0-300 kg/hm~2, Jinchuan 1 increased by 66% and Yanfeng 47 increased by 61% , palatability of Jinchuan1 by 65.33 enhance to 69.83 while the N amount 0 to 75 kg/hm~2, while the N excessived, palatability value dropped 24.8%, Yanfeng 47 dropped 14.3%. The content of protein increased 25.7% and 29.7%, the content of amylose reduced 3.1% and 1.96%. The rice appearance, the viscosity , the degree of hardness and RVA characteristic values are closely related. Therefore ,with suitable apply amount N , it can improve grain yield and palatability, but the different genotype responded differently. In the experimental conditions , 75kg/hm~2 and 37.5-75kg/hm~2 of N are benificial to high yield and well palatability for Jinchuan 1 and Yanfeng 47. The increased of nitrogen fertilizer improved the mill and appearance quality of Jinchuan 1.4.The most appropriate applying for yied of Jinchuan 1 is: N: 202.0-236.1kg/hm~2 , P : 99.8- 127.8 kg/hm~2,K:100.4-126.5 kg/hm~2;the most appropriate applying for palatability of Jinchuan 1 is: N: 93.4-146.8 kg/hm~2 , P: 79.7-107.4 kg/hm~2,K: 74.9-107.7kg/hm~2。...
