Blueberry, Ericaceae, Vaccinium spp. is a kind of perennial shrub and an important class of small berry fruit. Blueberry anthocyanins are superior than the average plant physiological activity, with a stronger anti-oxidation, anti-ulcer, anti-inflammatory and cancer prevention capacity. Because the blueberry anthocyanin can facilitate rhodopsin regeneration, protect eyesight, and improve memory, so the in-depth study of it is benefit to its exploitation and utilization. The research focuses on the following aspects:(1) Using pH differential method and HPLC method, We compared 11 varieties of blueberry anthocyanins content and analyzed the species composition of the major anthocyanins. Measured results showed different anthocyanin content of different varieties, Gardenblue anthocyanin content is up to 405.66 mg/100g-FW, Powderblue at followed by 330.87 mg/100g-FW, then the Climax, Brightwell, Baldwin and O'Neal, Sharpblue, the lowest content is Meiqing, it only has 83.58 mg/100g-FW. Several rabbiteye blueberries' anthocyanin content in Zhejiang was significantly higher than those cultivated in the region of several southern highbush blueberry varieties.From the above work on method development, High percentages of cyanidin, petunidin and malvidin were found relative to the total anthocyanin content in 7 kinds of anthocyanin pigment that were tested. The proportion of early eluted peaks was lower in all rabbiteye cultivars than in highbush respectively, indicating early varieties of highbush blueberry have much more polar anthocyanin content, their stability is relatively low. However, the more stable ones increase in the proportion of anthocyanins components of rabbiteye blueberries.(2) The research also measured components of fruit sugar content by HPLC method. In rabbiteye blueberries, Brightwell was most in sugar, glucose and fructose contents, Climax was in the second, Powderblue was the lowest. The content of glucose and fructose has reached more than 90% in sugar composition. Ripe blueberry fruit have low acidity below 1%. The results show that it has no significant changes in correlation between the sugar-acid ratio and accumulation of anthocyanins.(3) After observation of phenology, the flowering of rabbiteye blueberry is around early in April in Zhejiang area, Southern highbush blueberry flowering is earlier at the end of March, the fruits mature in 60 to 90 days. The fruit coloring from the beginning to ripening time is only about a week. In the whole developmental stages of fruit ripening, TSS and glucose, fructose and total sugar increase rapidly at first, then slowing down, and later increased rapidly again, and finally slowed down or reduced; acid content decreases fastly at first and then slow down; accumulation of anthocyanin content was zero at the beginning, and then increase more and more quickly, leveling off after ripening; total phenol content decreased at first, then gradually increased.(4) The antioxidant activity is greatly influenced by the composition of the phenolic composition. Relating the total anthocyanin contents with the antioxidant effect gives an R2 value of 0.8764(FRAP value) and 0.8547(DPPH scavenging rate). Meanwhile, the value of R2 between total phenolic content and the antioxidant effect is 0.8618(FRAP value) and 0.8638 (DPPH scavenging rate). These findings correlated well.(5) We covering the blueberry trees using different color filter membrane and study of the fruit quality changes under different light quality. The results show that the total anthocyanins was lower than the control, but the anthocyanin content of the fruit that blue membrane covering treatment is higher than the red membrane covering, so that affect fruit color in the short wavelength light is better than long wavelength light. Light intensity significantly affected the content of anthocyanin, the light quality on the accumulation anthocyanin is relatively small, and under natural light, the anthocyanin content is highest, indicating that mulching significantly reduced anthocyanin content. Film opened a week later, anthocyanin content increased. (6) We made scientific researches on the fruit quality changes after foliar spray organic fertilizer on the fruit tree in different concentration. The result is that the anthocyanin content of fruit was increased after the treatment. The processing effect of fertilizer to dilute 100 times is better than 300 times. The anthocyanin of blueberry that had used 100 times diluted concentration of organic fertilizer has increased significantly compared with control, and the total phenolics also added as a result. The foliar spraying organic fertilizer can improve the condition of Zhejiang area barren yellow laterite effectively, and the organic fertilizer can promote the growth of fruit and improve fruit quality.
