Study On The Changes Of Polyphenol, Other Chemical Compounds, Activity Of Corr Esponding Enzymes In Tobacco Leaf During Aging

The experiment was carried out on University of Science and Technology of China from 2004-2006. The paper focus on the changes of the contents of total polyphenol, chlorogenic acid, rutin, total nitrogen,protein, nicotine,total fat, water-soluble sugar,reducing gsugar, sucrose, and starch, the activity of polyphenol oxidase, Proteinase, lipoxidase,and amylase in the 16 samples of the strips of flue-cured tobacco (YunNanB2FB,YunNanC3FB,GuiZhouB2FB,GuiZhouC3FA,FuJianB2FA,FuJian C3FA,AnHuiB2F, AnHuiC3FC,HeNanB2FB, HeNanC3FA,HeiLongJiangB2L, HeiLong-Jiang C3L,Brazil B10,Brazil L20M, Zimbabwe L20, Zimbabwe T10F)from 8 ecological regions(the Provinces of YunNan, GuiZhou , Fujian, AnHui, HeNan, HeiLongjiang in China, Brazil and Zimbabwe) in different stages during aging.The results are as follows:Firstly,the total polyphenol,chlorogenic acid,rutin,total ni-trogen,protein,nicotine, total fat, water-soluble sugar, reducing sugar, sucrose, and starch in the sixteen sample of the strips of flue-cured tobacco show the steady trend of decline. The contents of total polyphenol, chlorogenic acid, sucrose in the aging of 10 months have significant difference(P<0.01), total nitrogen in one sample (HeNanB2FB) has significant differe-nce(P<0.05),the other fifteen samples have no significant difference. ,protein in one sample(HeNan B2FB) has significant difference(P<0.05),the other fifteen samples have no significant difference. Nicotine in three samples (YunNanB2FB,GuiZhouB2FB, FuJianB2FA) have significant difference(P<0.05), the other thirteen samples have no significant difference, total fat in six samples (YunNanB2FB, GuiZhouB2FB, FuJianB2 FA,AnHuiB2F, Brazil L20M ,Zimbabwe L20) have significant difference(P<0.05),the other ten samples have no significant difference, water-soluble sugar in four samples(YunNanB2FB, AnHuiC3FC, HeiLongJiangC3F, BrazilL20M )have significant difference(P<0.05),the other twelve samples have significant difference ( P<0.01), reducing sugar in four tobacco samples(FuJianB2FA, HeNanB2FB, HeiL ongJiangB2L, ZimbabweL20) have significant difference(P<0.01), the other twelve samples have significant difference(P<0.05), starch in one sample(A nHuiC3FC) have significant difference(P<0.05),the other fifteen samples have no significant difference. total polyphenol, chlorogenic acid, rutin, total nitrogen,protein, nicotine,total fat, water-soluble sugar,Red-ucing gsugar, sucrose, and starch in all the sixteen tobacco samples show decrease quickly in earlier stage,and slowly in later stage, compared with all these chemical compounds before aging.Secondly,Polyphenol Oxidase activity does not recover, and it descends during aging. The activities of proteinase,lipoxidase,and amylase recover during aging, the activities of all these three enzymes rise in the earlier stage, and descend in the later stage. Polyphenol and polyphenol oxidase, Protein and Proteinase, total fat and lipoxidase, starch and amylase show positive correlation.Thirdly, The changes of the majority party of chemical comp ounds and enzymes show laws between different ranks of tobacco leaf from the same region, but those show difference between same ranks from the different regions.
