The experiment was carried out on samples of flue-cured tobacco from different producing areas (Fujian, Yunnan, Guizhou), analyzing the correlation between tobacco color and polyphenol content as well as the activity of polyphenol oxidase. The experiment content involves the relation between color changes of strips and browning reaction under different storage conditions (air-tight and reducing oxygen, normal oxygen condition). The main findings are as follows:1. By the study of the color and polyphenol content as well as the activity of polyphenol oxidase of flue-cured tobacco from different producing areas. The results are as follows:①The gloss of tobacco leaf samples from5regions(Yongding, Changting, Wuyi Mountain of Fujian Province, Tongren of Guizhou Province, Dali of Yunnan Province) have significant difference, the color and chromaticity index have no significant difference.②The chlorogenic acid, rutin content and total polyphenols in the tobacco samples from Tongren, Dali is higher, compared with all these chemical compounds in the tobacco samples from other3regions.③The chlorogenic acid, rutin content, total polyphenols and polyphenol oxidase activity indicators in the tobacco samples from Wuyi Mountain in the aging of3months show the significant trend of decline. The color of the tobacco samples from Fujian Ninghua, Yongding of Fujian Province and Yilang of Yunnan Province have been deepened, the chlorogenic acid, rutin content, total polyphenols and polyphenol oxidase activity indicators were decreased.2. By the study of the color and polyphenol content as well as the activity of polyphenol oxidase of flue-cured tobacco from different producing areas. The results are as follows:①Under the condition of air-tight and reducing oxygen, the color of the strips of flue-cured tobacco from the other four regions expect Wuchuan of Guizhou Province changes slowly with the extension of aging time, compared with flue-cured tobacco under normal oxygen condition. While, the color of flue-cured tobacco from Wuchuan of Guizhou Province deepens with the extension of aging time and the color intensity descends significantly.②Under the condition of air-tight and reducing oxygen, the color of the sample strips of C4F from Malong of Yunnan Province is slightly weaker than that of the same period under normal oxygen condition. The color of C4F deepens with the extension of aging time, and the deepen extent is comparatively high in the first12months. The intensity, gloss and oil of strips of flue-cured tobacco increase slowly in the first9months. Under normal oxygen condition, the chlorogenic acid, rutin content and total polyphenols in the sample strips of B2F from Lianqing of Fujian Province descend much more significantly than that under the condition of air-tight and reducing oxygen.③Under normal oxygen condition, the activity of polyphenol oxidase of C4F from Malong of Yunnan Province and B2F from Lianqing of Fujian Province changes comparatively much, the stability of it is comparatively weak, and the activity of it fluctuates with the change of storage time. While under the condition of air-tight and reducing oxygen, the activity of polyphenol oxidase changes comparatively little, generally speaking, it is higher than that under normal condition.
