The objectives of this research were to determine the basis nutritional components and the effect of Gushi chicken soup on immunity in mice. There were two experiments.Experiment 1: The soup was made by Gushi traditional method and the dry powder was made by refrigerated centrifuge.We determined the basis nutritional component of Gushi chicken soup and the effect of Gushi chicken soup on immunity in mice, made use of direct drying method, micro-kjeldahl metdod , acid hydrolysis metod and combustion method.The results showed that : Gushi chicken soup was fit for human consumption , with high protein content (0.61%), less fat content (0.12%), higher levels of ash content (0.2%).The animal experiment on effect of Gushi chicken soup on immunity in mice was designed into two groups (Goup A and Group B), each group including 8 treatments: 7 days after physiological saline into stomach, 7 days after low dose chicken soup into stomach, 7 days after middle dose chicken soup into stomach, 7 days after high dose chicken soup into stomach ; 14 days after physiological saline into stomach, 14 days after low dose chicken soup into stomach, 14 days after middle dose chicken soup into stomach, 14 days after high dose chicken soup into stomach .We used 6 mice in each treatment and we used 96 mice in the whole exiperiment .The mice in Group A was feed timely in each day among the days .We sampled after 7 or 14 days and tested the immune apparatus index and E-rosette ratio.Shigella vaccine was injected by hypodermic injection on the back of mice in Group B on the day before feeding. The mice was feed timely in each day among the days. we sampled after 7 or 14 days and tested the immune apparatus index , phagocytosis of macrophages index(a) and immune antibody level.The result of immunoassay showed that xompared with feeding physiological saline, the weight, immune apparatus index, phagocytosis index (a) of macrophages, immune antibody level and E-rosette ratio of mice fed by Gushi chicken soup could be increased with the increasing of dose .And the spleen index, immune antibody level and E-rosette ratio reached a significant level (P<0.05) .So we could conclude that the immunity of mice could be enhanced by feeding Gushi chicken soup. Compared with after7days' feeding , the weight , E-rosette ratio, liver index of mice after 14 days' feeding were larger and the weight, liver index, immune antibody level, E-rosette ratio reached a significant level (P<0.05). So we deduced that the immunity of organism could be enhanced and maintained for a long time by continual feeding.Experiment 2 were about the dynamic effect of different feeding term on immunity of mice.
