Chinese chive was originating from china. It had a long history of planting and a great variety of cultivation, Chinese chive became a kind of important vegetable for its abundant alimentation and the function of officinal .The more used of nitrogenous fertilizer for the more turnouts and it induced rapid increase of the contents of nitrate in all of the vegetables. By the advance of people's living conditions and the knowledge of health, the importance of nuisance-free vegetables be known step by step, because the nitrate can be translate into the substance which would induce cancer in human's body, so the contents of nitrate in the vegetables became one of the important index of nuisance-free vegetables test. The contents of nitrate in the Chinese chive and other leaf-vegetables had be adverted widely, but at the same time people do more study of the contents of nitrate fasten on the leaf-vegetables which the content of nitrate is higher, and the quantity of fertilizer be used on fruit-vegetables was much more than on leaf-vegetables, whereas people hadn't pay much attention to the content of fruit-vegetables. The effects of the carbon on nitrate contents were researched by means of spraying leaves in Chinese Chive(leaf-vegetable) and eggplant(fruit-vegetable) with different carbon ,and mensuration of the nitrate contents and physiological and biochemical Indexes for getting the active controllable technology to reduce the contents of nitrate and explore the mechanism of control, and boost our country's development on nuisance-free vegetables to give some instructional suggest for developing nuisance-free vegetables.1. Effects of decreasing nitrate accumulation on Chinese chive were researched by means of spraying leaves in Chinese chive with propanetriol, carbinol, dextrose and carbon dioxide enrichment. The results showed that the content of nitrate was reduced significantly with spraying leaves with 1.0% propanetriol, from 14.29 to 21.90%, and it was increased by 8.85% with spraying leaves with 6.0% urea. At the third day after spraying leaves with 1.0% propanetriol being compared with the control pure water, the content of NAR was reduced by 24.3% significantly, but Fm, qP, ETR ,and the contents of protein and chlorophyll were increased by 27.67%, 14.76%, 16.36%, 7.69% and 11.22%, respectively .2.The nitrate content of eggplant fruit was closely bound up with it in leaves not only the new leaves but also the old leaves which was adjacent to the fruits, follow it moved up in leaves ,it had a direction of upward gradient at the same time.3.
