In view of accumulation of nitrate in the vegetables, this experiment as tried the material take the Chinese chives, under different nitrogen levels, researched effects of different concentration SA and Glu on nitrate content by spraying on leaves and irrigating roots in 9 days before harvesting stage, and measured related physiological and biochemical index, which including NRA, free amino acid, dissolvable protein and soluble sugar, and try to analyze aggressive regulating technical and modulating mechanism of decreasing the nitrate content. The results were summarized as follows:After spraying on leaves or irrigating roots by SA and Glu, both SA and Glu can decrease the nitrate content of Chinese chives, but effects of spraying on leaves is better than that of irrigating roots obviously, and effects of SA on deseasing nitrate content it is the most obvious, next is spraying on leaves by Glu, again is irrigating roots by SA, final is irrigating roots by Glu.Lower concentrateon SA (0.5-3 mmol·L-1) can decrease distinctly the nitrate content in leaves of Chinese chives, enhance the yield of Chinese chives, improve the activity nitrate reductase, and enhance the photosynthesis of leaves; meanwhile, higher concentrateon SA can increase the nitrate content in Chinese chives, and inhibit the growth of Chinese chives. Glu (0.5-10mmol·L-1) can decrease the nitrate content in leaves of Chinese chives, which take on the trend of increasing in the beginning and then decreasing with the enhancement of the concentration of Glu; the effect of 5mmol·L-1treatment was most better and lower 15.14% than CK, and after Glu treatment, the activity of nitrate reductase and the content of chlorophyll, photosynthetic rate of leaves increase in different degree.Effect of nitrogen on growth of Chinese chives and the accumulation of nitrate are obviously, which the nitrate content increase along with increasing of nitrogen levels, meanwhile nitrogen shortage and high nitrogen make against the growth of Chinese chives. 3mmol·L-1 can decrease effectively nitrate content in different nitrogen levels, especially it has obvious effects in high nitrogen stresss, which decrease 21.6% than control; but 5 mmoI·L-1 Glu can decrease accumulation of nitrate in low and middle nitrogen levels, however, Glu hasn't obvious effects in high nitrogen stress.After spraying SA on Chinese chives, both the Vc content and soluble sugar increase, while the content of free amino acid and dissolvable protein increase and decrease; but after spraying Glu on Chinese chives, soluble sugar, free amino acid and dissolvable protein are higher than control, the Vc content hasn't obvious difference. In summary, SA and Glu of appropriate concentration can improve nutrition quality of Chinese chives to some extent.
