Along with the society developing, people's standard of living has been improved with a great extent in 21 century. So bite and sup is being become more refined. But diseases are becoming more and more prevalent such as cardiovascular disease, constipation, bowel cancer, diabetes mellitus, et al.. The concept of food consuming has been transformed. People paid much regard on functionality than on sense. The functional food would be becoming the leading food in 21 century by degrees. Dietary fiber, as a classes of functional component in food, was considered had many special functions like prevention of colonic cancer, hypertension, diabetes and so on. It was the named "the 7th nutriment" after sugar, protein, fat, water, mineral and vitarmin. The developed country has paid more attention to research and application of dietary fiber from 1990s.As a kind of characteristic vegetable originated from China, water bamboo (Zizania Latifolia) was only cultivated along Yangze River and the south areas, and consumed around the areas before 80s of 20 centuey. After that time, Zizania Latifolia has been introduced to many areas around China along with the planting structure's adjusting and the system of vegetable circulations' reforming. Some processed products have been exported to other countries like Japan, Korea, North America, Australia and European Union.The organic fertilizer not only has comprehensive nutrition but also can meliorate character of edaphic and accelerate edaphon's activity in soil and can shape a fine environment for crop's growth. So the quality of crop products could be improved when organic fertilizer is used.So it should very significative that determine the contents of dietaryfiber and its components and their reactions to organic or inorganic fertilizer to offer the scientific basis for citizens' diet, or increase the exportion of characteristic vegetable of our country, or research the principle of high quality of organic food.In this paper, one-season harvest cultivar "Jiangshu" and two-season harvest cultivar "Fenghongzao" of zizania latifolia were used as experimental material. General nutrition components of zizania gall were firstly analyzed in the gall' swellng. Then contents change of crude fiber, dietary fiber and its main components were investigated in zizania gall's swelling, their reactions to different configuration of fertilizer were studied. Also their functionalities were analyzed. Main results showed as follows:1. Content of main components of non-structural-carbohydrate (NSC) increased collectively but decreased at anaphase in gall's swelling. Contents of dissociative aminophenol and solubility protein were lower and decreased at anaphase of gall's swelling. Contents of total dietary fiber in edible part oi zizania gall were high and mainly were insoluble dietary fiber. Cellulose and hemicellulose have a high proportion than lignin and pectin observably in DF components. While contents of crude fiber were comparatively low. Content of TDF changes gently in gall's swelling and increased at the anaphase. Content of cellulose ascended and that of hemi-cellulose decreased in gall's swelling. Content of ADL ascended at first, then descended, but ascended again at anaphase in gall's swelling. Content of TP> WSP and protopectin ascended first then descended. There were some differences between cultivars.2. Content of TDF changed unconspicuous in gall's swelling but that of SDF inscreased markedly and that of CF decreased in some sort whenorganic fertilizer was used. It was imply that it could improve the quality of zizania gall when organic fertilizer was used. The change extent of DFs in Fenghongzao was greater than those in Jiangshu. Content of soluble dietary fiber (SDF) increased and that of CF decreased while those of TDF changed inconspicuously in edible part of the gall. Cotent of CEL descended and those of ADL and HC ascended in Jiangshu' gall while content of CEL ascended and those of ADL and HC descended in Fenghongzao. All contents of pectic were a litt...
