Apple pomace was byproduct of fruit-processing.If it was not fully used ,it would contaminate enviroment .In this paper ,feed-protein production was studied with apple pomace by the solid state fermentation (SSF) .And activities of protease ,pectinase and cellulase were determined in the solid state fermentation.l.The main composition of pomace was determined.Its carbohydrate and crude protein content were 40% and 4.0%~8.2%,respectivily. 2.The fermentation of single strain and mixed fungi were studied. Ten strains fromYeast,Aspergillus and Trichodema were preliminarily screened.The experiments showed that yeast CY-4,2637 and Aspergillus10 were suitable strains.The yeast scale-up culture and character of Aspergillus solid qu were studied .3.Optimizing medium:The effects of addition of diverse nitrogen sources on SSF were reviewed by single factor tests and orthogonal tests .And optimizition medium determined,which were bran 10%,NH4NO3 1.0%,urea 0.5%.4.Optimizing culture condition: The effects of water content ,inoculation size ,charge and temperature on SSF were studied by single factor tests and orthogonal tests. Optimizing fermentation condition were water content 60%,inoculation size 10%,charge 30g and temperature 35 C ,inoculating interval 24 hours by orthogonal tests. Inoculation proportion was 1:3 and fermentation time was 84h.5.After fermented,protein content was 13.0%,improved 40% higher than unfermented pomace and 500% higher than raw pomace .Protease ,pectinase and cellulase activity were 126.2U,55.2 U,2.9 U,respectively.And we studied pectinase property.
