Up to the present, researches of the purple bud tea and its anthocyanins component are still few. In tea colony species, the bud of parts of tea trees have the leaf color as the purple but not green is called purple bud leaf, such tea that the tea tree produces is a purple bud tea. This paper pay attention to the special component -anthocyanins in the purple bud and proceed to research the total antioxidizability of the purple bud tea. Through this research we can urge the purple bud tea as a kind of new tea resources for study and developments.In this thesis the samples adopted from Szechwan and selected the purple bud and green bud tea of the colony species in little and middling leaf. Through the split extraction, we got the extracts of the tea samples. Then the required volume of the sample extracts was applied to the top of PVP column. After purification of the extracts, 4 fractions were separated. Put the purified fractions into refrigeration drier and made it dry. UV-Vis, HPLC. FT-IR, Mass was used to identified the four fractions. And the antioxidizability of purple bud tea and green bud tea was compared by the method of DMPD. All measurements got out following conclusions:1 The antioxidizability of the purple bud tea is outstanding. The experiment indicated that the total antioxidizability of the purple bud tea was 30%, higher than the green tea's. But whether this result was due to anthocyanins was not confirmed. Some researchers reported that the antioxidizability of anthocyanins is not higher than flavonoid. In the same time, other researchers refered that anthocyanins have the ability to improve the antioxidizability of ascorbic acid well itselfs antioxidizability is common. The antioxidizability of purple bud tea was distinctly higher than green bud tea from the same variety. But this does not show that the antioxidizability of purple bud tea higher than polyphenol. The reason for this is the purple bud tea contain other polyphenol The content of anthocyanins is rather low than tea polyphenol in purple bud tea, so it's antioxidizability for tea is relatively low. For the anthocyanins have the same synthesis path and the sameprecursor-flavanone with the polyphenol, if the purple bud tea have high content of anthocyanins, it would have high content of polyphenol.2 The content of anthocyanins in purple bud tea was 5-10 fold higher than green tea. The varieties of anthocyanins in the same species were same. The variety's number of anthocyanins from Szechwan species was 4 or more. It includes Pelargonidin, Petunidin, Peonidin, Cyanidin. We determined the structure of sample 4 may be cyanidin-3-O-B-sophoroside.We discussed the development of purple bud tea. For the purple bud tea have abundant flavonoid such as anthocyanins et al, if we push out a kind of hygienical tea made from purple bud tea, it should be popular in market.
