"Yao"is an ancient mountainal minority in south of China, it's history can trace back to "Wuling Man"in Chang Sha of Han Dynasty which was mainly active at the mid-and-lower reaches of Yangtze River and the area of Dong-ting Lake. About North-south Dynasty, "Yao"ethnic group formed a unitary minority communist, which has been developing till today for more then 1600 years. During this period, it developed unique cuisine cultures different from the former dwellers. "Yao"traditional dining cultures is a serial system which comes from "Yao"people's eating behaviors; it's the product of the combination of a certain living background and historic social background. The result of over levels organization of the new and the tradition, it's far more be the adjustment for "Yao"people's adjusting the natural living background and social cultural background, which embodies rich cultural meaning. This paper studies and analyze mainly with "Yao"traditional dining culture in Guangxi province to sort out its developing line, to know and understand more about it so as to find an efficient way to protect and hand it down. For promoting the economic development and improving "Yao"people's living standard. There's closed relationship between dining and survival environment, residential areas. So this paper starts from the survival environment and geographical distribution, emphasizes on the relationship between the natural living environment and "Yao"traditional dining culture. Then sort out its developing line, mainly divided as four periods: far ancient to Sui & Tang Dynasty, Song & Yuan Dynasty, Ming & Qing Dynasty and modern times to now , which shows its entire procedure. A minority's means, customs and developing standard of dinning directly reflect her dining conditions, cultural quality, wisdom and intentional ability as well as the achievement and features of cultivating and utilizing nature. The paper studies and analyzes its features of relying on the mountain since living in it and moving ploughing from the traditional dining structure, special food, dining containers, dining customs and taboo. "Yao"is a minority with many branches distribute broadly. In the time of her immigrating, she absorbed the other minorities'cultures, so, her traditional dining culture possessed the features of minorities', distributionalism and multi-element, ect. It's divided into several styles: Five-mountain Yao region; Northwest Guangxi rock mountain region; Northeast hills and plains distribution among Han, Zhuang, Yao in Guangxi province; the Shiwan mountain region in Southwest Guangxi province. Behind those Yao traditional dinning cultures, it has rich culture. The development of Yao multi-dining culture has many factors, among them, the functions of natural geography environment and social environment are more important. "Yao"multi-dining culture influenced her society deeply and broadly since coming into being. Besides the effect to the Yao economic productive way, traditional culture and national consciousness, it also brought the enlightening function on its food processing industry, health care medicine and tourism development and promoting "Yao"minority's economic and social development. The traditional Yao dining culture is not at a standstill, but an active developing procedure. Today, we should attach great important on it. I propose that the key is how to smooth the switch issue when it's modernizing so as to elaborate its functions on promoting Yao economic and social development, improve Yao people's living standard as well as pursuiting the efficient method to protect this traditional culture and hand it down.
