Bean curd residue is the waste residue of tofu processing and it has high nutritional value, it contains cellulose, eggs, sugar , fat white and 19 kinds of amino acids. Bean curd residue often is chucked as animal feed or as waste, for the rational utilization of bean curd, The technology of drying methods and deodorization and decoloration to dietary fiber(DF) from Bean curd residue was studied, The technology and conclusion of Purification of dietary fiber(DF) from Bean curd residue was studied with enzymatic hydrolysis, The technology of insoluble dietary fiber(IDF)translate into soluble dietary fiber (SDF) was study in a deep-going way, So that it have important practical significance with increase the yield of soluble dietary fiber and improve efficiency of Bean curd residue. The result showed:Drying methods on sensory quality and functional properties have significant influence, so the dried product water holding capacity, swelling, and combined with fat capacity by vacuum freeze-drying , vacuum drying and electric drum wind drying was studied , The result showed that vacuum freeze drying is the best drying method ,but in considerate of the cost, electric drum wind drying is the best;Through a single factor and orthogonal design experiments of time of deodorization, temperature of deodorization and concentration of NaOH, the optimal conditions for deodorization is 0.9% NaOH, time 80 min and 90℃water bath temperature.Through a single factor and orthogonal design experiments of bleacher dosage, bleaching time, temperature, pH and the proportionment of soybeans dregs and water , the optimal conditions is 8%H2O2, pH 9, temperature 60℃, time 4 hour and proportionment of soybeans dregs and water 70:1 .Through a single factor and orthogonal design experiments of thermostableα-amylase removal amylum, the optimal enzymatic hydrolysis conditions with consistence, temperature and time was studied. The result showed that 1% thermostableα-amylase, temperature 100℃and time 4 hour . The yield rate of insoluble dietary fiber was 27.37%,and that of soluble dietary fiber was 9.36%.Through a single factor and orthogonal design experiments of cellulose hydrolysis conditions with consistence, pH, temperature and time, the optimal enzymatic hydrolysis conditions with insoluble dietary fiber translate into soluble dietary fiber was studied. The result showed that 2% cellulose, pH 4.6, temperature 60℃, time 2 hour. The yield rate of insoluble dietary fiber by the cicrulating extraction with the optimum conditions rise to 16.25%.
