Hazard Analysis and Critical Control Points (HACCP), which is a management system and standards, has been already used in the food industry abroad. HACCP system is a scientific, simple and practical preventive food safety system. The system has positive effects on preventing latent problems from raw material , processing storage, transportation and sale of the whole process. It also has great effeets on reducing the risk of potentially hazardous products.A complete food safety management system should include HACCP, GMP (Good Manufacturing Practice) and SSOP (Sanitation standard operating procedures). GMP and SSOP is the base of the execution of effective HACCP and the basis of high level of Preventive Food Quality and Safety Management System.This paper is based on the successful application of HACCP in food company. It investigeted the application of 7 principles of HACCP to provide a basic format of HACCP application mode to help some food enterprises to combine the reaseach with liquor production. In addition, the paper summarized steps and procedures of HACCP audit, analysed existing problems and provided countermeasures about HACCP application in the food industry. This are great help to liquor production of HACCP application in China.
