Abalone,endowing with delicious taste,delicate,subtle flavor,and huge economic value,is called the soft gold in Marine organisms.In recent years,with the development of international trade,the abalone culture and its processing technology,the exports of processed abalone have shown the increasing trend.However,the problem of processing technology and technical barriers to trade also restricts the development in exports.Through research and exploration,a practical food quality and safety system which can be applied to the abalone culture is important for guaranteeing the quality and safety of abalone.Nowadays the main export processing method of abalone is frozen processing.This paper aims to ensure the quality and safety of abalone,and to break its trade barriers to frozen abalone.It is modeled after Dongshan island,one of the important areas of abalone culture and processing in Fujian province.And after the observation and understanding of the relevant circumstances of frozen abalone in the areas,which ranges from its farming to its processing,the paper intergrates some related theories which the international food industry recognizes as advanced level,such as the risk analysis,good agricultural practices(GAP),hazard analysis and critical control point(HACCP),good manufacturing practice(GMP),and sanitation operating procedures(SSOP)and so on.Then they can be applied to the process from farming to the quick frozen,and forms the effective key technology for safety production.Referring to the GAP,the key technology establishes a set of aquaculture practices suitable for abalone culture,and based on those practices,it carrys on the HACCP plan,so that it effectively controls the harm brought by the processing environment and medication,and supplies the qualified and reliable raw materials for quick frozen processing.Validly using the theories of GMP and SSOP during the processing after capture,then the mode of processing when carrying on the HACCP,can deal with the quality problem from the pathogenic microorganism and the contamination of the environment,therefore ensuring the product quality of exported quick-frozen abalone,and realizing the key technology of safety production that can effectively control the whole process of abalone freezing,which contains the finished product made of the raw abalone.To test the implement effectiveness of the key technology,it verifies how the key technology works out since the East Aquatic Co,Ltd.Of Fujian in Dongshan Island implemented it.It detects the quality of abalone,the workshop of frozen abalone,the microbial pollution condition of the food contacting surface and the finished product.It turns out that the raw material of that company meets the export standard,and that the environment of workshop is in healthy condition,the finished products have safety and reliable quality.All these affirm the effectiveness of the operational prerequisite program.What's more,the inspection from the official or the third party also proves that the key technology is scientific and effective.
