HACCP is an effective, scientific and simple preventive food safety assurance system. It has positive effect on preventing - latent problems come from raw material, processing, storage and distribution. It also has great effect on reducing the risk of potentially hazardous products. This thesis discussed the application of principles of HACCP in milk powder industry.On basis of GMP and SSOP established by the factory and results of related experiments, HACCP system of the industry was established and kept running. Modification for the HACCP system was also made with during the application of the system. Comparison of the quality of products in 2003, 2004, and 2005 indicated that HACCP system had very distinct positive effect on the quality of milk powder. Quality of final products improved, while the un-qualified products decreased.
