UHT are the critical products of many dairy industry in Hangzhou. The competition among companies has become the competition of quality of products, in our country , and food safety has become an important problem, which is related to the health of people. The item improves the security grade of the UHT efficiently, by setting up the HACCP during the process of UHT.Hazard analysis and critical point wae widely used in food industry recently, which was a system for preventing hazard in food, and can deceease or even avoid defect through critically controlling key procedures. Accordingly, it also can be used milk industry. In the thesis , HACCP system was established in UHT liquid milk . Two main part were involved here:1. HACCP system was established for UHT liquid milk. According to the seven basic principles of HACCP, the hazard analysis for the UHT liquid milk technology technics was taken, and the CCPs were ascertained. The CCPs of the UHT liquid milk mainly included raw milk receiving , raw milk storage, equipments and pipelines CIP cleaning, ultra high temperature sterilization, cooling, package sterilization, aseptic package.2.
