Milk powders as one of the highest nutritional value foodsare playing the important roleson improving people's health and enhancing the basic character of national qualityin our daily lives.In recent years,people have lost confidence to China's milk safety because the milk safety problems occur frequently.The dairy industrygoes through recession.The roots causing these problems lie in the deficiencies of industrial chain and oversight of regulators in the dairy industry.Milk traceability systemincludingcow breeding,transportation and milk powder processing has become an important means to solve the safety of milk products.This paper taking the Shijiazhuang Junlebao Dairy Co.,Ltd.as the research object had scientificly designed the key points of data collection and recording in the important production.It included thestructural establishment of traceability system by the research of cow breeding,transportation,milk powder processing and sales to milk powder production.The security risks of the whole industry chain were also analyzed.At the same time,the seamless monitoring system in all production was designed based on the key technical parameters.The database structure of milk traceability system was also established.It will promotethe industrydeveloping healthy.Firstly,critical control points were setthroughthe research of the influencefactors unsafety in the environment of cow-farming,raising model,sources of feed and feed additives,and disease prevention.The dates of cow-farming process were collected andrecorded.Then,according to the characteristics of milking and transportation process,critical control points of staff personal hygiene,milking equipment running,inspection,disinfection,milking and milk quality indicators were set inmilkingprocess.Hygiene,transportation routes and the reception systems of milk transportation were also established to ensure the milk safety.Raw milk reception,quality and safety testing,using of additives and nutrition,product testing procedures were being monitoredin the course of milk production.The dates of milk-production process were collected and recorded including testing,clarification,blending,homogenizing,sterilizing,concentration,spray drying,packing and final inspection.Safety and health situation and the equipment operationin the workshop were also recorded to make sure of the milk quality.Finally,by the analysis of the milk products supply chain,the milk productions were separated into four processes which were cow-farming,transportation,production,storing and the sale.According to the characteristics of the four processes,designing the traceability code,determining the necessaryinformation of quality traceability,and finishing the data base structure design of milk traceability system were established.Those works can be used for the further reach ofthe whole computer trace ability system.
