In today’s catering industry,industry barriers are low,and the competition among enterprises is fierce;consumers are increasingly demanding catering food safety and dish taste.For Chinese catering companies to develop and grow,they need to take the road of restaurant chain;the foundation of chain catering operations is standardization of catering operations.Catering companies have many problems in the establishment of standardization system,standardization implementation,and standardization improvement,including differences in store chef skills,lack of standards for vegetable quality,differences in raw material quality,inaccurate amounts of ingredients,incomplete supply chain standard processes,process differentiation,lack of automation in equipment,lack of basic data,etc.These problems have seriously affected the effectiveness of enterprise standardization operations,and urgently need to be resolved and optimized.In view of the problems in the standardized operation of chain restaurants,combined with the research status and trends of the Chinese food supply chain and standardization,a comparative analysis of the research status of western food standardization operations,taking Qianxi Catering as an example,analyzes the many challenges that Qianxi Catering faces in the process of standardization.Study the development history and many reform measures of Qianxi Catering,deeply analyze the factors that caused these problems;and put forward detailed and feasible standardization system recommendations and implementation plans.Qianxi Catering takes multi-format dishes as the core of its products,and the model of "chain stores+central kitchen" as its core of operation;at the store side,implement standardized system training,introduce catering robot equipment to strengthen the control of the dish processing process,and establish the quality control standard of the dish;at the central kitchen side,improve the supply chain standardization system,refine the business rules and the assignment of powers and responsibilities,promote process standardization,and introduce automated processing equipment.At the company level,implement the standardization and unification of basic data of materials,and standardization of non-standard products;introduce a professional information system,establish a strong supply chain operation system and store operation system to support the standardized operation of hundreds of chain restaurants.In the process of promoting catering standardization,a standardization system and implementation measures have been established.For example,sorting out and improving the standardization system of the supply chain processes,standardizing the research and development of dishes,packaged dishes,standardizing the quality of raw materials,introducing standardization by suppliers,standardizing data management,etc.In the end,it can bring significant effects to the standardization of dishes and tastes,effectively support the rapid expansion of chain restaurants,and enhance the popularity of catering brands.
