Selenium is one of the essential micronutrients for human and animal daily life activities.It can maintain the normal physiological function of cells,enhance the human autoimmune system,and play an important role in eliminating harmful free radicals and preventing cancer.Wheat is one of the main food crops in China.Among cereal crops,it has strong selenium enrichment ability and is widely used in selenium enrichment research.Therefore,in order to explore the effect of selenium fertilizer treatment on wheat growth and grain nutritional quality.In this study,wheat selenium enrichment experiment was conducted in the Agricultural Station of Shanxi Agricultural University from 2018 to 2020.The effects of Spraying Selenium at different growth stages and different concentrations of selenium fertilizer on the main agronomic traits,grain selenium content and other trace elements and nutritional quality of wheat were studied by applying exogenous selenium fertilizer to different varieties of wheat planted in selenium deficient areas.In order to increase the content of micronutrient elements in wheat grain and improve the nutritional quality of wheat,theoretical basis and practical experience were provided.The results are as follows:(1)The wheat leaves were sprayed with 0.02 g·L-1sodium selenite solution at heading stage and filling stage,respectively.The results showed that,compared with Spraying Selenium at heading stage,spraying selenium at grain filling stage could significantly increase the content of selenium in wheat grains,promote the absorption of selenium in wheat grains,promote the absorption of nutrients such as Fe,Zn,crude protein,free amino acids,starch,soluble sugar and sucrose in wheat grains,and inhibit the absorption of heavy metals such as Pb,as and CD.(2)Foliar spraying of 0.01 g·L-1,0.02 g·L-1,0.03 g·L-1,0.04 g·L-1,0.05 g·L-1and 0.06g·L-1 se fertilizer could significantly increase grain Se content and anthocyanin content of black wheat "Heijian 36-1" and "Heijian 36-2",and Se and anthocyanin showed synergistic effect.When the spraying selenium concentration was 0.02 g·L-1,the selenium content of "Heijian 36-1" and "Heijian 36-2" were 0.295 mg·kg-1 and 0.278 mg·kg-1,respectively,which reached the maximum value of the safety standard of selenium enrichment.With the increase of selenium fertilizer concentration,the selenium content exceeded the standard of toxicity and was not edible.With the increase of selenium concentration,the contents of Fe and Zn in grains of black wheat "Heijian 36-1" and "Heijian 36-2" were promoted,while Mn and Cu had no significant effect,but the bioavailability of heavy metals Pb,as and CD was significantly reduced.(3)The results showed that spraying selenium at different growth stages could improve grain selenium content,micronutrient Fe,Zn content and nutrient composition of black grain wheat "linhei 131" better than that of white grain wheat "Liangxing 67";With the increase of the concentration of selenium fertilizer,the promotion effect on grain selenium content,micronutrient content and anthocyanin content of Heijian 36-1 was better than that of Heijian 36-2.In conclusion,from the point of view of the safety standard of selenium enrichment and improving the nutritional quality of wheat,the best spraying period of selenium is the filling period;The best selenium spray concentration is 0.02 g·L-1.
