A Study On Kitchen Settings In The Hexi Region Of The Han,Jin,and Han Dynasties

The cooking map shows the overall layout of the kitchen,and is an intuitive visual material for understanding the catering culture of the Han and Jin Dynasties in Hexi region.The operational space of a kitchen is one of the constituent elements in the kitchen map.The diversification of its kitchen facilities,cooking utensils,containers,cooking aids,food cooking,and storage methods is an important content of the food culture,reflecting the rich social and material life of the Hexi region from the side.Taking the cooking map of Hexi region during the Han and Jin dynasties as the center,through the collection and collation of cooking map and unearthed ceramic stove image data in Hexi region,a total of 170 cooking maps and 23 ceramic stoves were obtained.The kitchen utensils,cooking,and storage methods appearing in the kitchen were systematically sorted out,and the image content was interpreted in combination with previous research.According to their functions,kitchen utensils are divided into cooking utensils,containers,kitchen utensils,and other auxiliary appliances.Cooking utensils are further subdivided into cookers,roasters,food storage devices,and brewers,including kettles,steamers,stoves,loquats,griddles,clans,ovens,and barbecue forks;Sheng Rong has a bowl,plate,table,table,etc;Kitchen utensils include chopsticks,spoons,forks,etc;The auxiliary device has a meat hook,a hook,and a tableware rack.Distinguish the differences between the two through case analysis and textual research;The objects carried in the slaughter map and the meat cutting map are "meat machines";The object of the tableware combination is not a "tableware cabinet" but a "tableware rack".In terms of food cooking and storage,combined with bamboo slips,there are proven cooking methods such as broiling,boiling,steaming,frying,removing,and braising;Food storage methods include preserved wax,sugar pickling,drying,pickling,and ice storage.Compared with the kitchen setup of Han Dynasty stone reliefs,the Hexi region has both inheritance and Hexi characteristics.The identification of the location of Zaoji in the northeast corner and the southeast corner is closely related to the Yin Yang Five Element View,the method of aversion to victory,and the belief in the "Four Sages" during the Han and Wei dynasties.
