As the number of Sunite sheep has increased,the production of sheep’s tail fat increased.However,sheep tail fat cannot be reasonably used and developed at present,which has caused a large amount of waste of sheep tail fat.Therefore,the development and utilization of by-products of mutton sheep need to provide systematic basic data.In this study,6,18,and 30-month-old Sunite sheep tail fat under natural grazing conditions was selected to determine the moisture content,ash content,crude fat content,collagen content and antioxidant value.The adipose tissue protein extraction kit and BCA protein concentration determination kit to determine the crude protein content,and colorimeter to determine the value of L*,a*,b* in sheep tail fat;Ultra Performance Liquid Chromatography system and high-resolution tandem mass spectrometer were performed to detection and data collection,extract,annotate and quantify metabolites,and ratio≧0.5 or ratio≦0.5;p-value≦0.05;VIP≧1 as the standard to differentiate metabolites analyze and explore the composition and changes of amino acids and fatty acids in fat metabolites of Sunite sheep tail at different ages.The result showed age of 6,18,and 30 months Sunite sheep tail fat,the moisture content was 5.82%,5.14%,5.14%,respectively;the ash content was 0.87%,0.81%,0.85%,respectively;the fat content was 94.09%,93.38%,91.85%,among which there was a significant difference between 30-month and6-month-old(p<0.05);protein content was 2.37%,3.37%,2.30%,respectively;collagen content was 1.51 mg/100 ml,1.48mg/100 ml,1.08mg/100ml;peroxide value is 0.90mg/kg,0.88mg/kg,0.87mg/kg,respectively.The measurement result of chromaticity value showed that the L* value and a* value of 30 months old were significantly different from the other two months(p<0.05).Saturated fatty acids,monounsaturated fatty acids,and unsaturated fatty acids were screened out in metabolites according to the threshold criteria for screening differences,mainly including fatty acids such as linoleic acid,oleic acid,and palmitic acid.Oleic acid,linoleic acid,and oleic acid showed a significant up-regulation trend between30-month-old and 6-month-old,30-month-old and 18-month-old groups,and palmitic acid was significantly up-regulated between 30-month-old and 18-month-old groups.The trend indicates that the content of unsaturated fatty acids in sheep tail fat increases with the age of Sunite sheep.According to the threshold criteria for screening differences,the essential amino acids were selected from the metabolites: phenylalanine,leucine,valine,etc.;delicious amino acids: alanine,glutamic acid,arginine,etc.,which indicate that the essential and functional amino acids in sheep tail fat are rich in types.This study provides comprehensive and systematic basic data for the research and product development and utilization of Sunite sheep tail fat,and it would be of great significance to improve the utilization and added value of sheep tail fat.
