Study On Fence Preservation Technology Of Youtazi

In order to discuss the influence of Youtazi fence preservation technology on the quality and shelf shelf life of theYoutazi,Youtazi was used to determine the formulation of the Youtazi composite anti-aging agent,the most suitable sterilization conditions,packaging method and preservation temperature.The results were as follows:(1)The best compound anti-aging agent formula was optimized by the response surface method for soybean lecithin 0.3%,mucolyse 0.0035%and xygen 0.4%.The compound formula has some inhibition effect on the aging trend in the process of reservoir preservation.(2)Through orthogonal test,it was determined that the optimal sterilization process of Youtazi was:nisin 0.012%for preservatives,45 min for UV sterilization,and 10 cm for UV sterilization distance.The compound sterilization process can not only extend the storage period of Youtazi under the condition of normal temperature preservation,but also extend the storage period of Youtazi to 17 days under the condition of refrigeration,which is 6 times the shelf life of Youtazi in the current market.(3)Using 60Co-?-ray irradiation treatment of Youtazi,it was found that the number of microorganisms in the Youtazi decreased with the increase of the radiation dose,and increased with the extension of preservation time.After 1-3 kGy 60Co-?-ray irradiation treatment,the growth rate of microorganisms in the Youtazi is not obvious under the condition of normal temperature preservation,which shows that the irradiated dose of the Youtazi is more effective in 3?9 kGy under the condition of temperature preservation.Combined with other indicators and economic safety angles,the irradiated dose range of Youtazi is suitable in 3?7 kGy.(4)Packaging materials combined with active packaging has the role of co-extending the shelf life of Youtazi sub-shelves.The barrier of aluminum foil packaging material(aluminum PA/foil/PE)is significantly better than that of PET/PE packaging material(P<0.05).In addition,in all the active packaging methods of aluminum foil packaging materials,OS200 and EE30 and aluminum foil packaging is a new packaging method that can be applied to the storage of Youtazi,can maintain the edible quality of the Youtazi during the preservation period,and extend its shelf life.(5)Various fence factors can play a synergy between the Youtazi shelf life can be extended to 7 days under normal temperature storage conditions,under refrigeration conditions,at least 29 days of Youtazi shelf life.The fence preservation technology used in this experiment can maximize the shelf life of the Youtazi on the basis of ensuring the quality flavor and microbial safety of the Youtazi.
