The Study On Eggs Cleaning And Preservation Technology

Over the past twenty years,China has been the world's superpower egg production and consumption,to shorten the distance with some developed countries,increase egg exports,accelerate clean egg industry is imperative.Clean egg is refers to the shell eggs after cleaning and disinfection,drying,coating,preservation and a series of process of eggs.This experiment adopts the enzyme fluid to clean dirty eggs,wood soaking disinfection sterilization of liquids,chitosan coating insurance,the main result of the experiment is as follows:1,protease,lipase,cellulase as cleaner to clean dirty eggs,the results showed that the compound enzyme liquid cleaning effect is better,the best proportion of compound enzyme liquid for:protease,lipase,cellulase = 2:5:3 Clean condition is:soaking temperature 30 ?,soaking time of 30s,static immersion.2,by salmonella in vitro bacteriostasis experiment from eight kinds of Chinese herbal medicine in the screening of bacteriostatic effect is the best Chinese herbal medicine for:wintergreen,rhizoma coptidis,pomegranate peel.The orthogonal experiment get when wintergreen:rhizoma coptidis:pomegranate peel = 9:2:6,bacteriostatic effect is best.3,for the composite enzyme liquid and liquid sterilizing effect,implied to the total number of colonies and salmonella dirty eggs count.Results show that composite enzyme liquid and liquid implied to dirty eggs have good sterilizing effect.4,full of dirty eggs cleaning,disinfection,coating,preservation experiment,the experimental results for:composite enzyme liquid,Chinese herbal medicine,chitosan composite combination,decontamination,has the very good sterilization effect,can effectively control the eggs sensory,physical and chemical indicators of changes during storage,to prevent deterioration,eggs preservation effect is obvious.
