Lonicera edulis is a kind of precious,rare,natural and nutritious berry fruit.The results show that there are a lot of nutritious elements in Lonicera edulis,which has high health value and high acceptance.As a new product,effervescent tablets are more common in the market and highly recognized by people.In this paper,a new product was developed by combining Lonicera edulis and effervescent tablets to increase the product diversity,further improve the deep processing of Lonicera edulis,increase the added value of Lonicera edulis products,and enhance the use value of Lonicera edulis.In this paper,the best formulation of the whole jelly dry powder of Lonicera edulis was studied.The quality and stability of the effervescent tablets were evaluated:(1)Study on the formulation of the effervescent tablets of Lonicera edulis whole jellpowderThe best formula was determined by single factor experiment.On the basis of single factor experiment,the box Behnken design of Design-Expert 8.0 software was used.The response variables were the amount of indigo fruit powder,the amount of sugar,the amount of disintegrating agent and the ratio of disintegrating agent,and the sensory score was the response value.Finally,the optimal formula was obtained as follows: 1.83g/100 ml of fruit powder,4.12g/100 ml of sugar,45.42g/100 ml of disintegrant,and 2:1 of disintegrant ratio.The effects of different drying temperature on anthocyanins,polyphenols and total flavonoids in Lonicera edulis whole jelly dry powder effervescent tablets were determined by p H differential method.The results showed that drying temperature and drying time had great influence on the contents of anthocyanins,flavonoids and polyphenols in effervescent tablets.The drying time should be within 3.5 h and the drying temperature should be within 50 ℃.The drying temperature was 50 ℃ and the drying time was 3h.(2)Study on quality standard of Lonicera edulis whole jelly dry powder effervescent tablets.The appearance and properties,weight difference,disintegration time limit,p H value,hygroscopicity,total flavonoids,water content,total phenol,total acid and antioxidant activity of the effervescent tablets of whole jelly dry powder of Lonicera edulis were examined.The results showed that the effervescent tablets were light purple,sour and sweet,slightly fishy,and the surface was complete and smooth,without fracture,cracking,deformation,and no visible to the naked eye Impurities.The results showed that the weight difference of each tablet was within 3.2%;the average weight of tablets was 0.71;the average disintegration time was 5.52 min;the brittleness was 5.28%;the average hardness was 219.85n;the average p H value was 6.44;the moisture content was 1.85%;the total flavonoids content was 0.04%;the total phenol content was 6.71%;the total acid content was 0.96%.And it has certain antioxidant activity.According to the correlation analysis between the mass concentration andantioxidant activity of Lonicera edulis whole jelly dry powder effervescent tablets,the DPPH scavenging ability of Lonicera edulis whole jelly dry powder effervescent tablets was the strongest.(3)Study on the stability of Lonicera edulis whole jelly dry powder effervescent tablets.In order to better store the whole jelly dry powder effervescent tablets of Lonicera edulis and have a longer shelf life,the stability test was carried out.The influencing factors were tested,including: high temperature test,light test,high temperature test,and accelerated test were carried out,which can better predict the shelf life of effervescent tablets after packaging.The storage time of effervescent tablets at room temperature was investigated.The results showed that the effervescent tablets were stable to high temperature,the indexes had no obvious changes,but the color would be slightly deepened,so high temperature should be avoided in the process of preservation.It was found that the effervescent tablets were easy to deliquesce under the condition of relative humidity of 90% ± 5%.The effervescent tablets were still easy to deliquesce under the condition of 70% ± 5% and the storage time was very short.Therefore,in the process of preservation,it should be sealed and dried,which can be put in a drying bag or sealed and moisture-proof way.In the accelerated test,using special effervescent tablets packaging,it was found that the indicators of effervescent tablets were relatively stable,which proved that the shelf life of effervescent tablets was longer.Strong light has a certain impact on the color of effervescent tablets,so attention should be paid to avoid light storage in production and storage,and dark packaging paper or packaging box can be selected.The results showed that the effervescent tablets could be stored at room temperature for a long time with stable properties and reasonable packaging,which could avoid the influence of surrounding conditions.
