In this study, ripe Lonicera edulis in production demonstration garden of Berries Institute ofHeilongjiang Academy of Agriculture had been chosen as test materials. We compared conditions ofdifferent pigment extraction processes, investigated its stability, and as well as application in the actualproduction.This test had used two methods of conventional solvent extraction and ultrasonic method to extractthe pigment. Cleared factors affecting the extraction rate by single factor experiment and the combinedeffects of factors were analyzed by orthogonal test. The optimal conditions of solvent extraction ofLonicera edulis red pigment were:Extraction temperature25℃, extraction continued2h, the pH valueof6, solid-liquid ratio of1:5. Ultrasonic single factor test and orthogonal test, The optimal conditions ofextraction Lonicera edulis red pigment by ultrasonicwere:Ultrasonic power70W, extraction continued30min, temperature is40°C, solid-liquid ratio of1:8. By comparison, using ultrasonic extractedLonicera edulis fruit red pigment could increase extraction rate and extraction time was shorter.Research results show that the Lonicera fruit pigment has good stability when stored in the dark atlow temperatures and can be stored longer. While in the long time to heat or direct sunlight, the stabilityof the pigment reduced. At the same time, studies have shown that the metal ions affected the pigmentstability a lot. Fe3+、Ca2+、Cu2+、Mg2+、K+could reduce the stability of the pigment in varyingdegree. Fe3+、Cu2+could make pigment color change. Al3+have darker role. Oxidizing and reducingagents have little effect on the stability of Lonicera edulis red pigment. Ascorbic acid and sucrose couldincrease stability of red pigment and had a darker role. Ascorbic acid was sensitive, and should be usedin smaller concentrations.Cherry fruit-flavored drinks, Schisandra fruit juice and grape juice drinks by adding lonicera edulisred pigment, lonicera edulis red elements has the best coloring effect for the fruit-flavored drinks andfruit juices, but also the optimal color fixative. Lonicera edulis pigments can be used in fruit-flavoreddrinks and juice drinks, interactions with other additives, the product has a certain shelf life, while thered pigment is innocuity, food safety, is an ideal natural pigment with exploitation prospect.
