Establishment Of You Tazi Quality Evaluation System And Research On Key Processes Of Mechanized Production

This experiment takes You Tazi as the research object.First,we collected 19 kinds of handmade You Tazi that are popular with consumers on the market,measured their physical properties,and carried out sensory evaluations,and established a You Tazi quality evaluation system using multivariate statistical analysis.The typical quality characteristic of You Tazi is that the surface is as thin as paper,with many layers.This experiment uses mechanical processing instead of hand-made to realize the multilayer structure of You Tazi,and optimizes the process and formula of mechanical processing.Through the fingerprint similarity evaluation system and the multivariate statistical analysis method,the similarity of flavor substances and key physical properties between the commercially available You Tazi and the mechanically processed You Tazi was compared,and it was confirmed that the mechanically processed You Tazi better maintained the quality characteristics of You Tazi.,With high fidelity.The experimental results are as follows:1.Based on the multivariate statistical analysis method,the relationship between 19 kinds of You Tazi physical quality indicators and sensory quality on the market in Urumqi was studied,and the purpose was to establish a You Tazi quality evaluation system.The results show that the physical property index system cluster analysis of You Tazi shows that when the squared Euclidean distance is 2.5,the correlation coefficient in the corresponding correlation analysis ranges from 0.954 to 0.990(p<0.01).Combined with the scatter diagram,it shows that hardness can replace chewing Sexuality and adhesion.Through partial least squares analysis and correlation analysis,the relationship between You Tazi physical properties and sensory evaluation indicators in Urumqi is studied.The results show that the hardness,elasticity,specific volume,height-diameter ratio and color difference L value can be used as the You Tazi marketed in Urumqi.Key physical property indicators in the Tazi quality evaluation system,and use the principal component analysis method to obtain a comprehensive scoring formula based on the key physical property indicators:F=-0.129X₁+0.265X₂+0.096X₃-0.159X₄+0.232X₅?2.Through single factor and orthogonal experiments,the optimal process conditions for forming You Tazi multi-layer structure by mechanical method are determined as follows:the kneading method is vertical high speed,the kneading time is 16 min,the number of oil brushing is 4 times,and the number of calendering is It is 2 times,and the final nip width is 35 mm.Under this process condition,a thin and multi-layer surface structure can be formed inside You Tazi.3.The You Tazi's formula for optimizing mechanical processing through single-factor combined response surface methodology is:52%water addition,0.2%yeast addition,3%oil brushing,and 0.75%sugar and salt addition.In comparison,You Tazi's mechanical process adaptability and quality are better.4.Through the fingerprint similarity evaluation system and the multivariate statistical analysis method,the similarity of the flavor substances and key physical properties of the commercial You Tazi and the mechanical technology You Tazi were evaluated respectively.The results show that the similarity between the mechanical process You Tazi sample and the commercial 1,commercial 2,and commercial 3 samples is between 0.647 and 0.915,indicating that the mechanical process You Tazi flavor substance similarity is generally similar.Principal component analysis of the relative content of 26 common flavor substances in 4You Tazi samples showed that hydroxyurea,ethanol,2-methyl-1-butanol,decane,3-methyl-1-butanol,(E)-2-nonenal,(Z)-2-decenal and other 7 flavor substances can be used as 4 You Tazi samples to comprehensively evaluate flavor substances.The Pearson similarity of key physical properties between You Tazi samples of mechanical process and commercial You Tazi samples is between 0.445 and 0.983,and the similarity of included angle cosine is between 0.454 and 0.988;mechanical process You Tazi samples are similar to commercial ones 1.The similarities of the 2You Tazi samples were 0.988(angle cosine similarity0.983)and 0.759(0.735),indicating that the mechanical crafts and the commercial 1 and commercial 2You Tazi samples were similar in key physical properties.
