| Iron is one of the essential trace elements in animal body.Iron deficiency or the abnormal utilization will lead to the disorders of oxygen transport,storage,and other metabolic process,affecting the growth and development of a variety of diseases.Anemia caused by iron deficiency has become a common nutritional deficiency.As a new type of iron nutrition enhancer,iron amino acid chelate has good physical and chemical properties and biological activity.Nanoliposome,as a new drug delivery system,is an excellent carrier to improve the stability and bioavailability of iron amino acid chelate.Iron threoninate chelate were chosen to be the object of this paper,It was prepared by everse phase evaporation and one-step injection method.According to the Encapsulation efficiency index,the optimum process parameters were obtained: EPC:CHOL:Tween=6:1:3.6:1.2(wt./wt.),the hydration medium p H was 6.8,ultrasonic power was 240 W.The SEM electron microscope showed that it has good spherical shape and smooth surface morphology;The result of Zeta potential is +6.38 m V,which shows that with certain positive,beneficial to the stability of the system;The results of elemental analysis showed that the content of ferrous iron was higher than 90%;The encapsulation efficiency of 65%-80% was measured by dialysis method;The result of particle size distribution showed that it is in the range of 20-350 nm,which in small particle size in the nanometer range,the average particle size is 70.69 nm,the PDI index is 0.345.The effects of related factors on the stability of iron threoninate nanoliposome were investigated,and the effects on the sensory quality and oxidation stability of the milk were investigated at the same time added iron threoninate nanoliposome to milk as iron fortifier.The results showed that the nanoparticles can maintain good stability in the early days of storage.With the increase of time,the core material will have a certain degree of leakage.Iron threoninate nano-liposome has good stability in the simulated gastrointestinal fluid,which can effectively avoid the dissociation in strong acid environment.Iron threoninate nano-liposome as iron fortifier added to milk,it shows less influence on the quality of milk compared with iron threonine and ferrous sulfate.Throughout the recovery of iron deficiency anemia in rats,to discuss the effect of iron threoninate nano-liposome on iron deficiency anemia in rats as the complement iron supplementation.The results showed that iron threoninate nano-liposome can improve the growth performance of IDA rats,increase the body weight and improve the Hb content,increase the iron icontent in liver and spleen,increase liver index and kidney index,increase serum FE content and decrease serum TRF and TIBC levels to make more body iron storage.The effect of iron deficiency anemia was better restored by iron threoninate nano-liposome than that by iron threonine and ferrous sulfate. |
