Iron is one of the essential mineral elements in the body,and it plays an important role in the treatment of anemia,maintaining the oxygen balance and energy metabolism.Threonine is one of the essential amino acids for human body,it can be used as metabolism improving agent and has a good effect on the anti-ulcer,anti-radiation,hypnotic,sedative,immune.Iron threoninate which is prepared by the ferrous and threonine is the third generation of iron nutrition fortifier,with small side effects,high bioavailability and good palatability.At present,anemia is still one of the highest incidence worldwide nutritional diseases.Therefore it's necessary to the iron threoninate development into a new generation of iron agent.This paper adopts direct coordination method with ferrous chloride,ferrous sulfate,ferrous carbonate and threonine as raw materials preparation of iron threoninate chelate.And ferrous chloride and threonine as raw material preparation method to optimize the process and the optimum technological conditions were determined as follows:mole of threonine and ferrous chloride molar ratio of 3.5:1,reaction temperature was 70,and reaction system pH value of 6.5.The result showed the iron threoninate production rate was 56.18%,the ferrous content of 10.92%.By the analytical means of chemical titration analysis,kjeldahl determination,element analysis,UV-VIS spectroscopy,X-ray powder diffraction analysis,TG-DTA analysis,infrared spectrum analysis,nuclear magnetic resonance(NMR)analysis and so on to carry out an initial characterization of the structure of the iron threoninate chelate,determined its molecular formula for C12H25O9N3Fe.Schaal oven method is used to study the ferrous chloride,threonine iron,TBHQ and different concentrations of iron threoninate in the antioxidant effect of animal lipid.The results showed that the iron threoninate at high concentrations of lipid and fats have the function of the catalytic oxidation to the lipid,while at low concentrations has certain antioxidant effect,and iron threoninate is more stable than ferrous chloride in the lipid.In addition,the oxidation stability of the iron threoninate solid and aqueous solution is studied,and found that under the same condition,iron threoninate stability is much better than that of ferrous chloride.
