With the rapid development of China’s economy,the scale of the catering industry has been expanding,but food safety problems emerge in endlessly.Nowadays,people pay more and more attention to the food safety problems,especially those related to colleges and universities.Such an industry environment is both an opportunity and a challenge for college group food enterprises.Therefore,college group meal enterprises have advanced and scientific food safety management system,which is the pillar of enterprise survival and development.At the same time,the establishment of an advanced food safety management system can also bring competitive advantages to enterprises and establish a good reputation and brand effect.This paper takes jinduzhenwei Catering Management Co.,Ltd.(hereinafter referred to as J company)as the research object,through the investigation and Research on the work of its staff,combined with the study and reference of relevant literature and materials of food safety management,focusing on the role of "people" in the food safety management system,this paper carries out the optimization analysis and Research on the food safety management system of J company,and puts the HSE management system into practice Integrate into the food safety management system,realize the application of HSE management system in the field of food safety,pay attention to the change of management process,pay attention to the timeliness of management system,and change its management mode from "experience supervision" to "participation supervision".Through interview and questionnaire survey on the employees of J company,we can fully understand the current situation of J company and the food safety risks of J company,which can be summarized into the following aspects: first,the low level of education of employees,the frequent turnover of personnel,the lack of effective training of enterprises,resulting in the lack of safety responsibility awareness of employees;second,the unclearresponsibilities of posts,the unclear implementation of responsibilities,resulting in the lack of service intention of personnel Third,food safety communication lacks breadth and it is difficult to form a broad consensus.Based on the analysis of the causes of the problems,this paper puts forward the methods to optimize the food safety management system.The optimization measures include: optimizing the organizational structure;optimizing the communication channels;optimizing and improving the rules and regulations;optimizing the level of food safety risk protection;optimizing personnel management and strengthening the executive power of employees.Based on the investigation and analysis of J company’s food safety management cases,it is verified that the optimization of food safety management system improves the work efficiency of food safety management in J company.
