| Brine geese,commonly known as ’the old geese’ by Yang Zhou people.In recent years,with a growing emphasis on diet,from the basics of eating well,to the development of safe and nutritious food.As one of representatives of Huaiyang cuisine,the quality and nutrition of brine geese began to be valued by all parties,while the same time,for the development of Huaiyang cuisine,many Huaiyang cuisine masters stated that they must establish standards.Formulating standards has important practical and long-term implications for expanding the influence of Huaiyang cuisine.The food safety standard for brine geese was set from physicochemical indicators,Pollutants indicators,Microbial indicators,Food additives and Illegal additives indicators.The procedures of consulting,collecting and researching for domestic and international standards were all taken during processing the standard.The advices from the experts in related areas,and the representatives from industrial companies were fully considered.The final draft was obtained after several modification and improvement.Most brine geese are processed in small workshops and are sold in street stalls.In order to control the health status of brine geese,and strengthen the management of food hygiene,it is necessary to study the sales hygiene of brine geese stalls.The study of the variation of quality characteristics of non-prepackaged brine geese under certain storage conditions is the basis for ensuring the quality and safety of the product.In this study,the quality characteristics and changes of non-prepackaged brine geese at different storage temperatures were analyzed.In order to provide theoretical references for storage and sales of non-prepackaged brine geese.1 The research on Physical and Chemical indicators of brine geeseThe Water content,Protein,Adipose and Sodium chloride of 150 batches of brine geese were determined according to the national standards.The results showed that the content of some indicators did not meet the requirements of the national standard GB/T 23586.2 The research on Pollutants indicators of brine geeseThe Total arsenic,Lead,Cadmium,Total mercury and Chromium of 120 batches of brine geese were determined according to the national standards.The results showed that Pollutants indicators of brine geese met the requirements of the national standard GB 2762.The long-term enrichment of pollutants in the body can cause great harm to human.while preventing the pollution of brine geese,we must also strengthen the detection of pollutants.3 The research on Microbial indicators of brine geeseThe Colony count,Coliform bacteria,Salmonella,Staphylococcus aureus,Shigella and Listeria monocytogenes of 150 batches of brine geese were determined according to the national standard.According to relevant limits,the qualified rate of Colony count,Coliform bacteria and Staphylococcus aureus is 70.83%,44.17%and 97.50%.The qualified rate of prepackaged brine geese was 100%.Non-prepackaged brine geese are more susceptible to contamination during processing,transportation and circulation.The food supervision department should strengthen supervision and monitoring of the Microbial indicators of brine geese.4 The research on the Food additives and Illegal additives indicators of brine geeseThe Nitrite,Sorbic acid,Lemon yellow,Sunset yellow,Chloramphenicol and Poppy shell of 300 batches of brine geese were determined according to the relevant methods.The results showed that some indicators did not meet the requirements of the national standard GB2760.1 batch of Chloramphenicol and 2 batches of Poppy shell were detected.5 The research on Stall sales status of brine geeseAccording to the method of stratified random sampling,a total of 204 stalls for brine geese were inspected.268 employees were employed,217 employees holding valid health certificates,and the holding rate was 80.97%.There were 204 health facilities with fly-proof and dust-proof facilities,and the qualified rate was 76.12%.The Coliform bacteria were tested on tools,plates,electronic scales and cutting boards used in the stalls,and the qualified rate were 39.44%,33.93%,29.81%and 25.98%.A total of 72 batches of brine geese were randomly selected and the qualified rate of Colony count was 68.06%,the qualified rate of Coliform bacteria was 36.11%,and 1 batch of pathogenic bacteria was detected.According to the experimental research,proposing sales health alert of brine geese,regulating the hygienic status of brine geese stall sales.6 The effect of storage temperature on the quality of brine geeseThe non-prepackaged brine geese were used as the research object to investigate the changes of Sensory indicator,Physical and Chemical indicators and Microbial indicator during storage at 4℃,25℃ and 35℃.For brine geese produced on the day and sold at noon,the recommended storage period is 35℃ for no more than 8 hours and 25℃ for no more than 20
