| Alone with the continuous development of economy and information technology,the combination of the traditional industry and the Internet produces a variety of new business models.Among them,the combination of traditional food supply chain transaction and electronic commerce technology springs out of "Catering O2O" mode,combining two parts of online and offline.On the one hand,the "Catering O2O" mode effectively widens the channel and reduces the cost,and has become an important thrust of the development of the catering industry.On the other hand,the lack of standard in the Internet catering industry also leads to a series of food safety problems.Food safety of catering O2 O supply chain is still a new research field.At present,the academic research on catering supply chain,O2 O model and the risk identification and evaluation of food safety is already in depths.However,the research on risk assessment food quality and safety based on supply chain under O2 O mode is still lacking.What's more,it cannot provide strong support for food safety risk based on supply chain under O2 O mode in theory yet.This paper aims to analyse the food safety risk in the operation of the catering O2 O,and we proposed a food safety risk evaluation system for catering supply chain under O2 O mode.Besides,We build up a risk evaluation model with appropriate method,which focuses on providing reference of food safety management in catering O2 O.Fistly,on the basis of the literature review related O2 O food supply chain and food safety theory in the domestic and foreign,with the mode of operation of the supply chain of food O2 O as the starting point,this paper combined the method of theory and literature analysis to identify the risk factors.Secondly,we construct the food safety risk evaluation index system of catering O2 O supply chain with the method of Delphi based on the expert ideas.Furthermore,combined with empiricalanalysis,the method of fuzzy comprehensive evaluation based on analytic hierarchy process(AHP)is used for risk evaluation and analysis,and the risk assessment results of are put forward.The result of the research shows that the risk level of food safety in catering O2 O is studied as "general risk",which indicates that the current level of Internet catering safety is in a relatively calm state.Finally,we proposed a few suggestions for food safety management in catering O2 O industry according to the assessment results. |
