Chai rice oil salt sauce vinegar tea " from the material level, tea as food, medicine, drinks in people’s daily life as an irreplaceable role. This paper analyzes the tea producing area, tea yield, tea category and the reasons that affect the development of tea industry in Ming Dynasty by means of literature research, metrology history and comparative research. The development of tea industry in a certain area.Chapter one,in the content of the study, mainly on the ming dynasty tea industry research background, ming in in the administrative division, and today is different, the formal high-level administrative district experienced the provincial,sub-provincial-provincial-Chengxuan Fuzheng Department of change process,Hongwu two years,no division of provinces,Hongwu nine years into the Department of cloth, from this Department and South Zhili as a first-level administrative unit, government,Zhili state,Xuanhui Department as a second-level administrative unit, state,Zhili county-level administrative units,three-level administrative units, formed from the model. The second chapter studies the tea producing areas in Ming Dynasty. The tea producing areas in the Ming Dynasty were mainly distributed in the Yangtze River basin of Sichuan,Guizhou,Huguang,Jiangxi,Zhejiang and South Zhili, and the Guangdong,Guangxi and Shandong areas in the lower reaches of the Yellow River in the Pearl River Basin, and Yunnan, located in the southwest region, was also one of the important tea producing areas. Its characteristics are that the tea-producing areas are widely distributed in the Ming Dynasty,Nanzhili,Shandong,Henan,Shaanxi,Sichuan,Jiangxi,Huguang,Zhejiang,Fujian,Guangdong and Guangxi The Secretary of Administration, the Secretary of Administration of Yunnan Province, and the Secretary of Administration of Guizhou Province, the Secretary of Administration of the Secretary of Administration,a total of 13 Secretary of Political Affairs, can be said to include from the south to the north of Shandong Laiyang.Second, the number of tea counties produced by the Department of cloth is uneven. The largest number of Zhejiang Buzheng Division,Fujian Buzheng Division tea-producing counties can reach 37% of the total number of Benbuzheng County, the lower Henan Buzheng Division only 2%,Shandong Buzheng Division the lowest, only 1%.Third,the distribution shows certain regularity. The tea production area in Ming Dynasty was mainly concentrated in Nanzhili,Zhejiang Buzheng,Huguang Buzheng,Sichuan Buzheng and other places in the Yangtze River Basin, followed by the Pearl River Basin,Yunnan Buzheng and Guizhou Buzheng in the southwest distribution, and the Shandong area is less in the north. From this tea catalogue,we can roughly see the distribution of tea production areas and the development of tea production in Ming Dynasty. The third chapter studies the tea yield in Ming Dynasty. The tea yield in Ming Dynasty consists of three parts: Gong tea,Guan tea and private tea.In the early Ming Dynasty,in order to meet the financial needs of the country and the stability of the border area,a strict tea law system was appointed.According to the existing records, the amount of tribute tea in the early stage of the generation was calculated to be 7273 jin, about 56026913 jin,and the total output of tea was 56.03 million jin.The quantity of Gong tea in the middle period is about 115400 jin,the quantity of tea is about 56047137 jin,the total amount of tea is 56.16 million jin,the quantity of late Gong tea is about 115800 jin,the quantity of tea is about 56.052770 million jin,and the total amount of tea is about 5 6.2 million catties. It can be seen that the increase after the middle of the Ming Dynasty is less than the early period, which may be related to the lax law and government in the late Ming Dynasty, and the proliferation of private tea. With the increase in the middle of the Ming Dynasty bold estimates, the late Ming Dynasty tea production at least 56.33 million jin.The fourth chapter, the Ming Dynasty tea category textual research and research. There are many kinds of tea in Ming Dynasty. There are about 98 kinds of ancient and modern tea names recorded in Huang Yizheng’s "Cyanotic Pearl ",and about 30 kinds of tea products recorded in Xu Wei’s " Xu Wenchang’s Secret Collection ".According to the research and research of this chapter, there are 13 tea-producing departments and Zhili state, and the number of tea products has been verified 373.They are 48 species in South Zhili,5 in Henan,8 in Shaanxi,49 in Sichuan,33 in Jiangxi,59 in Huguang,55 in Zhejiang,35 in Fujian,19 in Guangdong,7 in Guangxi,14 in Yunnan and 12 in Guizhou. Its characteristic is: first, tea category is more.Second,Uneven distribution.Third, there are tea products due to unclear production areas or inconsistent sources caused by inaccurate naming.Hope that through the author’s research combing,is conducive to the recovery of the current history of famous tea, committed to help a certain area of tea industry development.
