| Mulberry is not only a kind of medicine but also a food product.It has many functions,such as regulating immunity,maintaining beauty,anti-aging,reducing blood sugar and lipid,etc.Through the analysis of shape index,nutrient quality,functional properties and antioxidant ability of different mulberry cultivars in Hebei province,in order to build the chemical composition and functional properties database.According to different processing and utilization purposes,an appropriate mulberry variety evaluation system was established.We used the indexes of different mulberry cultivars in Hebei province to do the principal component analysis and subordinate function analysis.According to the comprehensive scores of mulberry quality,the improved mulberry cultivars suitable for different processing purposes were selected.The results were summarized as follows:(1)Some chemical components and functional characteristics,such as: fruit shape index,water content,pH,polyphenols,soluble protein,soluble solids,soluble sugar,carotenoids,chlorogenic acid,resveratrol,free amino acid,anthocyanin,flavonoids,DPPH scavenging capacityof 10 mulberry cultivars,such as Longsang,Baiyuwang,Zhongsang5801,Mengjian and Hongguo,were constructed.The database will lay a foundation for screening different mulberry cultivars in Hebei province.(2)Through principal component analysis,the evaluation model(F = F1*0.44036+F2*0.23919+F3*0.16485)of mulberry nutritional quality was established.The ranking of mulberry nutritional quality from high to low was Heizhenzhu,Sijiguosang,Mengjian,Yeyongsang,Hongguo,Zhongsang5801,Baiyuwang,Bailongsang,Longsang and Yesang.According to factor analysis,nutritional quality ranking from high to low was Heizhenzhu,Sijiguosang,Mengjian,Yeyongsang,Zhongsang 5801,Hongguo,Baiyuwang,Longsang,Bailongsang and Yesang.Through principal component analysis,the evaluation model(F=F1*0.68748+F2*0.17341)of mulberry functional quality was established.The ranking of mulberry functional characteristics from high to low was Mengjian,Yeyongsang,Zhongsang5801,Hongguo,Yesang,Longsang,Sijiguosang,Heizhenzhu,Baiyuwang and Bailongsang.According to factor analysis,functional characteristics ranking from high to low was Meng Jian,Yeyongsang,Hongguo,Zhongsang5801,Yesang,Sijiguosang,Longsang,Heizhenzhu,Baiyuwangand Bailongsang.Through principal component analysis,the evaluation model(F= F1*0.60652+F2*0.22511)of mulberry antioxidant quality was established.The ranking of mulberry antioxidant ability from high to low was Zhongsang 5801,Hongguo,Yeyongsang,Longsang,Mengjian,Heizhenzhu,Yesang,Sijiguosang,Baiyuwang and Bailongsang.According to factor analysis,antioxidant ability ranking from high to low is Zhongsang 5801,Hongguo,Yeyongsang,Longsang,Yesang,Mengjian,Heizhenzhu,Sijiguosang,Baiyuwang,Bailongsang.(3)According to the different purposes of processing and utilization,the suitable core evaluation indexes were selected,and the appropriate bid evaluation system was established.Through the results which were analyzed by subordinate function method,we screened out the improved cultivars suitable for fresh food,juice making,wine making and medicinal use of different mulberry cultivars.The suitable cultivars for mulberry fresh food making are Zhongsang 5801,Baiyuwang,Heizhenhzu and Mengjian;the suitable cultivars for mulberry juice making are Heizhenhzu,Hongguo,Yeyongsang and Sijiguosang;the mulberry suitable cultivars for wine making are Mengjian,Yeyongsang,Hongguo and Zhongsang 5801;the mulberry suitable cultivars for medicine making are Mengjian,Yeyongsang,Zhongsang 5801 and Hongguo;The mulberry cultivars suitable for comprehensive use are Mengjian,Hongguo,Zhongsang 5801 and Yeyongsang. |
