Soybean 7S and 11 S globulin account for about 70% of total seed protein Soybean 7S and 11 S globulin account for about 70% of the total seed protein,which is the main determinant and influencing factor of nutritional value and functional characteristics of soybean protein products.There are significant differences in nutritional quality and processing characterist ics between them.The decrease of 7S globulin content will lead to the increase of 11 S globulin content compensation.Adjusting the ratio of 11S/7S can improve the nutritional quality of soy protein and improve the processing characteristics of soy protein.In our research group,a variety of 7S and 11 S globulin subunit deletion mutant lines with Chinese soybean genetic background have been created,which enriches the germmeric basis of soybean protein component improvement breeding in China.However,the processing quality characteristics of various new germplasm types are not yet clear.In this study,eight kinds of mutant materials with different 7S and 11 S globulin subunit deletion characteristics were analyzed and evaluated systematic agronomic traits,nutritional quality(amino acids,free amino acids,fatty acid components)and processing characteristics(tofu,soybean milk processing characteristics).The results are as follows:(1)These strains which delete the 7S subunit and have the normal 11 S subunit show a significant increase in the number of main stem segments,effective pod s and 100-grain weight.(2)Among the eight 7S and 11 S globulin subunit deletion lines,the protein content and amino acid score were significantly increased compared with t he recurrent parent Dongnong 47,and the oil content was significantly decreased.DC17-3 and DC17-4 were high protein germplasms with protein contents of 46.27% and 46.83%,respectively.(3)The content of proline,tyrosine and arginine in eight 7S and 11 S globulin subunit deletion lines were significantly higher than that of the recurrent parent Dongnong 47.The seventeen amino acid contents,the total amount of essential amino acids,the total amount of sulfur-containing amino acids,and the total amount of amino acids of DC17-3 and DC17-4 increased significantly.The 7S subunit deletion and the 11 S subunit normal type germplasm showed a significant increase in glutamate content.(4)The total free amino acids and free arginine content of the eight 7S and 11 S globulin subunit deletion lines were significantly increased,and the largest total amount of free amino acids is BC5-148,which was 5-6 times than that of the recurrent parent Dongnong 47.In addition to C1424,the total amount of sulfur-containing amino acids in the mutants increased significantly.(5)The linoleic acid content and polyunsaturated fatty acid content of the eight 7S and 11 S globulin subunit deletion lines were significantly increased,and the oleic acid content was significantly decreased.(6)The benzaldehyde content of eight 7S and 11 S globulin subunit deletion lines was significantly decreased,and the content of flavor substances was significantly correlated with the deletion characteristics of the deletion subunits.C1424 and G2-2-3 were low bean flavor germplasm.(7)DC17-4,B12088,and BC5-94 are high 11S/7S ratio germplasm,the ratios were 5.61,4.28,3.76,respectively.DC17-4 was suitable for high gelatinous soy protein isolate production.(8)The soymilk content and tofu hardness of the eight 7S and 11 S globulin subunit deletion lines were significantly higher than that of the recurrent parent Dongnong 47.
