Potatoes have high nutritional value and processing added value.China is a large country of potatoes planting and production,and has broad prospects for the development of potatoes processing industry.However,at present,China’s potatoes processing industry is not developed,among which,potatoes peeling processing technology and equipment are not mature,especially the lack of suitable for medium and small food processing enterprises for small batch production of small machines.Therefore,this study carried out the research on the key technology of vertical cylinder potatoes peeling based on optimized experiment.The main research contents are as follows:(1)Aiming at the existing problems of large-scale peeling equipment,this study based on the working principle of washing machine and the method of brush peeling,a kind of vertical cylinder potatoes brush peeler structure design was proposed,and the structure optimization was carried out through the whole machine test.(2)In order to better evaluate the peeling effect of potatoes,the existing method for determining the peeling rate of potato was improved,and the improved methods were verified by model validation method.The results showed that the improved method was scientific and feasible,and could be applied to the actual determination of peeling rate of potatoes.(3)In order to explore the relevant factors affecting the peeling effect of vertical cylinder potatoes peeler and determine the factor level for optimizing the peeling test parameters in the follow-up,a single factor experiment was carried out in this study with potato as the test object,frequency of the inverter,feeding weight and peeling time as test factors.The results show that the optimized test parameters of the machine are: the frequency of the inverter is 55~65 Hz,the feeding weight is 5~7 kg,and the peeling time is 120~160 s.(4)Based on the single factor test mentioned above,the optimum test parameters of the vertical cylinder potatoes peeler were tested by multi-factor test,and the response surface optimization analysis of the test results was carried out by using Design Expert.The optimum combination of the test parameters was determined as follows: the frequency of the inverter is 59.42 hz,the feeding weight is 5.00 kg,and the peeling time is 129.90 s.Taking red-skinned yellow-hearted sweet potato and Dutch No.15 potato varieties as test objects,the optimum combination of test parameters was verified.The results showed that the optimum combination of test parameters was suitable for both potatoes and sweet potatoes,and could be used as reference for actual production of peeling processing of potatoes and sweet potatoes.Through the above research,a vertical cylinder potatoes peeler was designed and completed in this study,and the feasibility of the design scheme was verified by experiments.It provides a practical and effective peeling processing technology and equipment for medium and small food processing enterprises in China,which is of great significance for enriching the technology and equipment suitable for the production and processing of potatoes staple food products in China and to promote the development of China’s potatoes processing industry.
