| China is the world’s first pig-raising country and a major producer of pork.Pork is a major component of the people’s diet. With the development of social economy and people’s living standards, per capita pork consumption is also increasing year by year, while national consumption of pork is also increasing.Demand is shifting towards quality and safety, and safe and quality pork has become the goal of people. In recent years, people have become more and more concerned about food safety issues, especially animal-derived foods. The irregularity or even abuse of veterinary drugs will cause veterinary drug residues to exceed the permitted national standards, which will definitely affect people’s health problems. Therefore, the use of efficient and accurate detection methods to monitor veterinary drug residues in pork, and risk assessment through test results, has important theoretical and practical significance for the protection of health and public health of our residents. This project selected commercial pork and pig liver from 6 cities in Jilin Province as the research object.140 samples of fresh pork and 110 pig liver samples were collected, processed according to national standard methods, and samples were taken by liquid chromatography-mass spectrometry. The remaining seven major veterinary drug residues were tested: clenbuterol, ractopamine, salbutamol, chloramphenicol, oxytetracycline, chlortetracycline, tetracycline, and the test results were based on NY5044-2008 and NY/T843-The maximum veterinary drug residue limit specified in 2004 was judged and the risk of health of residents in this class of drug residues in Jilin Province was assessed. The results showed that there were 40 positive results in 250 samples,210 negative results, the total detection rate was 16%,the total over-standard rate was 6.4%,and the detection rates of veterinary drugs in pork and pig liver were 12.29% and 18.18%,respectively.At the same time, the detection of different contents of oxytetracycline and chlortetracycline is more common, but most of the samples do not exceed the national standard, but should still be concerned. The illegal use of ractopamine is more serious and will have an adverse effect on the health of regular consumption. The overall assessment data indicates that the consumption of pork samples in our province has a low impact on the health of residents, but management and prevention measures should be strengthened. |
